Weeknight Chicken Potpie

Preheat oven to 425°F. Grease a 2-quart casserole dish
- 1/3 cup butter or margarine
- 1/3 cup flour
- 3/4 cup chopped peeled onion
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 1 (14.5-oz.) can chicken broth
- 2/3 cup 2% milk
- 3 cups diced cooked chicken
- 3 cups frozen peas and carrots
- 1 (9-in.) double pie crust
Sauteed Baby Vegetables

Melt the margarine in a skillet over medium-high heat
- 1 Tbs low-calorie margarine
- 12 baby zucchini
- 12 baby carrots
- 12 baby yellow squash
- 1/4 cup low-fat low-sodium chicken broth
- Freshly-ground black pepper, to taste
- 1 dash salt, (optional)
Western Wagon Wheels

Prepare pasta according to package directions
- 1 lb Wagon Wheels, Rotini or other medium pasta shape, uncooked
- 1/4 cup all-purpose flour
- 1/2 tsp pepper
- 1 1/2 lbs skinless, boneless chicken breasts, cut into bite-sized pieces
- 3 Tbs vegetable oil, divided
- 2 cups broccoli florets
- 2 carrots, thinly sliced
- 1 cup frozen whole kernel corn
- 1 Tbs water
- 1 18-oz. bottle barbecue sauce
Bbq Turkey Burgers

Combine all ingredients in a large bowl
- 1-1/2 lbs ground turkey
- 1/2 cup onion chopped
- 1/2 cup BBQ sauce
- 1/2 cup dried bread crumbs
- 1/2 tsp salt
- 1/4 tsp black pepper
Sauteed Sweet Peppers

- 2 medium green peppers, cut 1" squares
- 2 medium red peppers, cut 1" squares
- 1 Tbs olive oil
- 2 Tbs water

- 2 cups precooked (1 cup uncooked) rice, hot
White Chicken Chili

In a large kettle combine dry white beans, chicken broth, crushed garlic cloves, and 1 chopped onion
- 1 lb dry white beans
- 6 cups chicken broth
- 2 garlic cloves, crushed
- 1 1/2 onion, chopped
- 8 oz green chili peppers, chopped
- 2 tsp cumin
- 1 1/2 tsp oregano
- 1 tsp cloves
- 1/4 tsp cayenne pepper
- 4 cups chopped cooked chicken
- 3 cups chicken broth
Nectarine and Almond Breakfast Gratin

- 1 Tbs butter cut into small pieces
- 1 tsp butter
- 5 Tbs sugar
- 1 egg
- 1/4 cup milk
- 1/4 cup all-purpose flour
- 1/8 tsp salt
- 2 cups thinly sliced nectarines
- 2 Tbs coarsely-chopped almonds
White Sauce

- 1/4 tsp salt
- 1/8 tsp ground white or black pepper
- 2/3 cup NESTLÉ® CARNATION® Evaporated Milk
- 1/2 cup water
Nectarine Spread
