Stir Fry Ginger Beef Recipe

1 Chill the steak in the freezer for 30 minutes before you slice it, this will make it easier to cut in thin slices
- Marinade
- 2 Tbsp unseasoned rice vinegar Tbsp soy sauce
- 1 Tbsp honey
- 1 Tbsp peeled, grated fresh ginger
- 1 teaspoon chile pepper flakes
- 1 teaspoon ground cumin
- Beef and stir-fry
- 1 1 1/4 to 1 1/2 lb top sirloin steak
- 1 Tbsp corn starch
- 2 Tbsp vegetable oil (preferably peanut)
- 1 Tbsp sesame oil (optional)
- 3-4 green onions, cut on a diagonal, 1/2-inch apart, including the greens
- 2 cloves garlic, thinly sliced
- 2-3 hot chiles, preferably red serranos, sliced
- 1 -inch nob of ginger, peeled, cut lengthwise into matchstick shapes
- 1/2 cup loosely packed, chopped cilantro
Chicken Strata

1 Combine chicken, bread, celery, onion, bell pepper and mayonnaise in a large bowl and mix well
- 4 cups chopped cooked chicken
- 6 slices white bread, torn into bite-size pieces
- 1/2 cup chopped celery
- 1/2 cup chopped onion
- 1/2 cup chopped green bell pepper
- 1/3 cup mayonnaise
- 2 cups milk
- 1 (10 3/4-ounce) can cream of mushroom soup
- 4 large eggs, beaten
- 1/2 cup shredded sharp Cheddar cheese
Chicken Fajita Crescent Braid

Heat the oven to 375 degrees F
- 1 (8-ounce) can Pillsbury(R) Crescent Recipe Creations(R) refrigerated seamless dough sheet
- or 1 (8-ounce) can Pillsbury(R) refrigerated crescent dinner rolls
- 1 tablespoon vegetable oil
- 2 small boneless skinless chicken breasts, cut into 1 by 1/2 by 1/2-inch strips
- 1 clove garlic, finely chopped
- 1 teaspoon chile powder
- 1/4 teaspoon salt
- 1 small onion, thinly sliced
- 1/2 cup (2 by 1 by 1/4-inch) green or red bell pepper strips
- 1/4 cup salsa
- 2 cups shredded Cheddar-Monterey Jack cheese blend (8 ounces)
- 1 egg white, beaten
Sweet Onion Dip

- 1 tablespoon olive oil
- 2 Vidalia onions (1 pound total), finely chopped
- Coarse salt and ground pepper
- 1 cup reduced-fat sour cream
- 2 ounces reduced-fat bar cream cheese, room temperature
- 1 1/2 teaspoons white-wine vinegar
- 1/4 cup finely chopped chives
- Potato chips, for serving
Carrot Raisin Salad

1 For the dressing, combine sour cream and milk in a small bowl
- 3/4 cup sour cream
- 1/4 cup milk
- 1 tablespoon honey
- 1 tablespoon frozen orange juice concentrate, thawed
- 1 tablespoon lime juice
- Grated zest of 1 medium orange
- 1/4 teaspoon salt
- 8 medium carrots, peeled, coarsely shredded (about 2 cups)

I love vanilla chai lattes, and I was really excited to find chai spice mix in the spice section of my local market
- 1/2 c. butter, softened
- 1/2 c. shortening
- 1 c. sugar, plus 1/4 c. for rolling
- 1/2 c. brown sugar
- 1 egg
- 1 1/2 tsp. vanilla
- 2 1/2 c. flour
- 1/2 tsp. salt
- 4 tsp. baking powder
- 2 tsp. cinnamon
- 1 Tbls. chai spice mix, plus 1/4 tsp. for rolling
