Pecan Toasted-Coconut Mandelbrot

1. Whisk together flour; baking powder and salt in medium bowl; set aside
- 3 cups flour, all-purpose
- 1 1/2 t baking powder
- 1/8 t salt
- 3 large eggs
- 1 cup sugar
- 1 cup vegetable oil
- 1 t vanilla
- 1 t almond extract
- 1/2 t lemon zest
- 3/4 cup pecans, chopped
- 1/2 cup coconut, unsweetened, toasted

Beat together pineapple with juice, bananas, milk, eggs, oil, vanilla extract and rum, if using, until well blended
- 8-oz. can crushed pineapple
- 2 to 3 bananas, sliced

1. Heat oven to 325 degrees F
- 16 extra-large white mushrooms, caps and stems separated
- 5 tbsp olive oil
- 2 1/2 tbsp Marsala wine or dry sherry
- 3/4 lb sweet Italian sausage, casings removed
- 6 scallions, white and green parts finely chopped
- 2 cloves garlic, minced
- 1 tsp kosher salt
- 1/2 tsp ground black pepper
- 2/3 cup panko crumbs (Japanese bread crumbs)

- 1/3 cup grated Parmesan

- 1 tablespoon butter or margarine
- 1 cup chopped red onion (1 large)
- 6 cloves garlic, minced (2 tablespoons)
- 3 medium avocados, halved, seeded, peeled, and mashed (1-3/4 cups)
- 1 14-ounce can chicken broth or vegetable broth
- 1 1/2 cups whipping cream
- 1 cup bottled salsa
- 2 tablespoons lime juice
- 2 tablespoons lemon juice
- 1 tablespoon ground cumin
- Assorted toppers (avocado slices, chopped red or yellow tomato, tortilla chips, lime slices, dairy sour cream, and/or cooked shrimp) (optional)

- 1 large white onion , cut in quarters
- 2 small carrots , chopped into large pieces
- 1 celery rib , chopped into large pieces

- 1/2 pound ground pork
- 2 tsp. table salt
- Cracked black pepper , to taste

- 1 cup whole milk
- 2 Tbsp. tomato paste
- 1 can (28 ounces) tomato puree
- 1 tsp. sugar
- Fresh basil , for garnish
