Arroz Con Leche (Rice Pudding)

Carson made this in kindergarten at Jefferson Elementary and loved it
- 3 cups rice (jasmine rice)
- 1 can evaporated milk
- 1 can condensed milk
- 4 cups regular milk
- 3 cloves
- Cinnamon
Chambord Ice

Combine 1 cup water and sugar, boil until sugar dissolves
- 3 cups water
- 1 cup sugar
- 4 cups raspberries
- 1 cup chambord
Cold Cucumber Soup

Combine and puree in food processor
- 1/2 cup fresh cilantro
- 1/4 cup onion
- 1/4 cup lime juice
- 1/4 cup buttermilk
- 1/4 cup sour cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 5 cucumbers
- 1 seeded jalapeno pepper
Asian Barbeque Chicken

Combine in a large plastic bag and marinate overnight
- 1/4 cup brown sugar
- 1/4 cup soy sauce
- 1 tablespoon lime juice
- 1/2 teaspoon crushed red pepper
- 1/4 teaspoon curry powder
- 3 minced garlic cloves
- 8 skinned chicken thighs
- Cooking spray
- Lime wedges
- Green onion tops
Louisiana Gumbo Seasoning

Use to season fish gumbo, low country boil, etc
- 1/4 cup garlic powder
- 2 tablespoons paprika
- 1/4 cup onion powder
- 1 tablespoon ground red pepper
- 1 tablespoon black pepper
- 1 l/2 teaspoons black pepper
- 1 1/2 teaspoons celery seed
- 1 1/2 teaspoons chili powder
- 1 teaspoon salt
- 1 teaspoon lemon pepper
- 1/2 teaspoon nutmeg
Cream Of Asparagus Soup

Bring to boil in large saucepan
- 1 pound sliced asparagus (about 3 cups)
- 2 cups chicken broth
- 3/4 tsp fresh thyme, divided
- 1 bay leaf
- 1 garlic clove, crushed
- 1 tsp flour
- 2 cups milk
- Dash nutmeg
- 2 tsp butter
- 3/4 tsp salt
- 1/4 tsp grated lemon rind

- Dressing:
- 1 head of chopped cabbage
- 8 green onions, chopped
- 8 tbsp. Slivered almonds
- 8 tbsp. Sesame seeds
- 2 pkg. Raman noodles w/o seasoning
- 4 tbsp. sugar
- 2 tsp. Nature's Seasonings
- 1 tsp. pepper
- 2 tsp. salt
- 1 cup vegetable oil
- 6 tbsp. rice vinegar
Chicken In Tomato-Tarragon Sauce

Cook the pasta according to package directions
- 1 tablespoon olive oil
- 4 skinless, boneless chicken breasts, trimmed of excess fat
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup all-purpose flour, for dredging
- 2 large minced shallots (about 1/2 cup)
- 1/3 cup dry white wine
- 1/2 cup fat-free, less-sodium chicken broth
- 1 1/4 cups chopped tomato (about 2 medium, firm tomatoes)
- 1 tablespoon minced fresh tarragon
- 1/2 cup crumbled feta cheese
Spice Rub For Beef

Coat your favorite meat with spice rub and let marinate for 3 hours
- 4 cloves garlic, crushed and finely chopped
- 2 tbsp black peppercorns, coarsely ground
- 2 tbsp coriander seeds, coarsely ground
- 2 tbsp cumin seeds, coarsely ground
- 1 tbsp fresh rosemary, chopped
- 2 tbsp white sugar
- 2 tbsp brown sugar
- 2 tbsp kosher salt
Polenta with Spinach and Cheese

Spoon into dish or pan, cover with plastic wrap, and chill for 2 hours or until firm
- 2 cloves garlic.
- 3 cups chopped spinach (3 1/2 oz.)
- 2 cups water and bring to a boil
- 14 1/2 oz. Chicken broth
- 1 cup polenta.
- Spinach mixture salt and pepper.
