Agnes's Fruit Cobbler

One of Agnes's favorite recipes and one of the few she shared with me before she died
- 1 egg
- 1/2 cup sugar
- 1/2 tsp. grated lemon rind
- 1 cup flour
- 1/4 cup milk
- pinch of salt
- 1 tsp. baking powder
- 1/4 cup melted butter
- 1 tsp. vanilla
- 3 cups sliced peaches
- 1/3 cup sugar (reserved for sprinkling on top)
- 1 tbsp. lemon juice
- Nutmeg
- Cinnamon
Figs & Toasted Almond Brie

This was the crowd favorite at the Greenbrier Farm Wine Club wine tasting at the Campman house in 2006
- 1/2 cup brown sugar
- 2 tablespoons water
- 6 fresh figs, stemmed and quartered
- 1 (14 ounce) round 4 1/4-inch diameter round Brie cheese
- 1/2 cup toasted almonds
- 1/2 teaspoon vanilla extract
Carson's Candy Cane Cake

Carson found this recipe on the floor of a Wal-Mart when she was 6 and insisted that we make it
- White Icing:
- 1 package Betty Crocker® SuperMoist® white cake mix
- 1 1/4 cups water
- 1/3 cup Vegetable Oil
- 3 egg whites
- 1/2 teaspoon red food coloring
- 1/2 teaspoon peppermint extract
- white icing, (below)
- crushed candy canes, or crushed hard peppermint candies
- 1 cup Powdered sugar
- 1 tablespoon milk or water
- 1/2 teaspoon vanilla, if desired
Buckeye Candies

Combine peanut butter, butter and powdered sugar
- 1 lb. peanut butter (smooth or crunchy)
- 1 cup butter, softened
- 1 1/2 lbs. powdered sugar
- 12 oz. chocolate chips
- 2/3 bar parafin wax
Orange-Honey Glazed Carrots

Cut the carrots diagonally in 1-inch-thick slices
- 2 lb. carrots, peeled (3 bunches)
- 2 tbsp. unsalted butter
- 2 tbsp. honey
- Kosher salt
- 1 tsp. minced fresh ginger
- 1 tsp. grated orange zest
- 1/2 C. freshly squeezed orange juice
- 1/2 tsp. freshly ground black pepper
Everyday Pimento Cheese

Finely grate cheeses into a large bowl
- 1/2 lb. extra-sharp Vermont white cheddar (1 packed cup)
- 1/2 lb. extra-sharp aged New York (orange) Cheddar (1 packed cup)
- 1/2 lb. Monterey Jack (1 packed cup)
- 1 (7 oz.) jar pimentos, drained and finely chopped
- 1/2 tsp. black pepper
- Cayenne to taste
- 2/3 C. mayonnaise
Lemon Freeze

In medium size bowl, combine crumbs, 2 tablespoons sugar and melted margarine or butter; blend well
- 1/2 C. Corn flake crumbs
- 5 tbsp. Sugar
- 1/4 C. (1/2 stick) margarine or butter, melted
- 2 eggs, separated
- 1 (14-oz.) can Eagle brand an sweetened condensed milk (not evaporated milk)
- 1/3 C. lemon juice
Baked Potato Soup

Cook together flour and milk over medium heat for 8 minutes until thick
- 4 baking potatoes, baked, peeled, and mashed
- 2/3 C. flour
- 6 C. Milk
- 3/4 C. Cheese
- 1 tsp. Salt
- 1/2 tsp. Black pepper
- Bay leaf
Chocolate-Mint Brownie Cake

- Cake
- 2 ounces unsweetened chocolate, chopped
- 1/2 cup (1 stick) unsalted butter, room temperature
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup all purpose flour
- 1/4 teaspoon ground cinnamon
- Icing
- 6 ounces good-quality white chocolate (such as Lindt or Baker's), chopped
- 3 tablespoons whipping cream
- 3/4 teaspoon peppermint extract
- Glaze
- 6 tablespoons whipping cream
- 6 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
- White chocolate curls (optional)
- Fresh mint sprigs (optional)
- Halved strawberries (optional)
Hot Bacon And Swiss Dip

Other than petting her cat and chain smoking, this was one of Gena Hauser's favorite things to do
- 1 (8-oz.) package cream cheese
- 1/2 C. mayonnaise
- 1 C. grated Swiss cheese
- 2 tbsp. chopped green onions
- 8 slices bacon, cooked and crumbled (it’s easier to use 1 pkg. of Hormel crumbled real bacon-near pepperoni in grocery store)
- 1/2 C. Crushed Ritz crackers (put in zip-lock bag and crush)
