Moroccan Slow-Cooked Lamb

The main entree of the Christina Siden Post-Marathon Celebration Dinner
- 1 tablespoon ground cumin
- 2 teaspoons ground coriander
- 1 1/2 teaspoons salt
- 1 teaspoon fennel seeds
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon ground black pepper
- 2 1/2 pounds trimmed boned lamb shoulder, cut into 1 1/2- to 2-inch pieces
- 4 tablespoons olive oil, divided
- 1 large onion, finely chopped
- 1 tablespoon tomato paste
- 2 cups low-salt chicken broth
- 1 15 1/2-ounce can garbanzo beans (chickpeas), drained
- 1 cup dried apricots (about 5 ounces)
- 2 large plum tomatoes, chopped
- 2 cinnamon sticks
- 1 tablespoon minced peeled fresh ginger
- 2 teaspoons (packed) grated lemon peel
- 2 tablespoons chopped fresh cilantro
Curried Pumpkin Soup

Great on Halloween night with Brie, french bread and white wine
- 2 tbsp. butter
- 1 large sweet onion, finely chopped
- 2 cloves garlic, through press
- 1 tbsp. curry powder
- 1 tsp. ground cumin
- 1 (15 oz.) can pumpkin puree
- 2 C. chicken broth
- 1 C. cream
Moroccan Tangerine and Olive Salad

Christina's side dish for the dinner she made for us after the LA Marathon in 2008
- 4 large tangerines
- 1/2 cup halved pitted Kalamata olives or other brine-cured black olives
- 1/4 cup extra-virgin olive oil
- 1 tablespoon white wine vinegar
- 1/2 teaspoon ground cumin
- 1/4 teaspoon paprika
- 1/8 teaspoon cayenne pepper
- 1 head of butter lettuce, torn into 1 1/2-inch pieces
- 1 1/2 teaspoons chopped fresh parsley
Gazpacho

Blend everything except juices, olive oil to vinegar in a blender or food processor
- 2 large cans Italian plum tomatoes, drained & liquid reserved
- 1 small onion, cut in chunks
- 1 C. green pepper, cut in chunks
- 1 C. cucumber, peeled, seeded & cut in chunks
- 1 tbsp. crushed red pepper (Or substitute)
- 1 clove garlic, sliced
- 1 tsp. cumin
- 1 tbsp. salt
- Freshly ground black pepper to taste
- 2 C. tomato or V-8 juice (or juice from canned tomatoes)
- 1/4 C. olive oil
- 1/4 C. wine vinegar
Coucous with Herbs and Lemon

- 1 medium onion, finely chopped
- 2 tablespoons extra-virgin olive oil
- 1 garlic clove, minced
- 3/4 cup water
- 1 1/4 cups low-sodium chicken broth (10 fl oz)
- 1 (10-oz) box couscous (1 1/2 cups)
- 1/2 cup finely chopped fresh parsley
- 1/2 cup finely chopped fresh basil
- 1/3 cup finely chopped fresh mint
- 1 tablespoon fresh lemon juice, or to taste

- 4 cups sugar
- 3 1/2 cups pumpkin
- 1 1/2 tsp. cinnamon

- 2 large garlic cloves, minced and mashed to a paste with a pinch of salt
- 1/4 teaspoon fennel seeds
- 1/4 cup olive oil
- 8 hot or sweet Italian sausage links
- 4 hero rolls
Broiled Asparagus With Balsamic Glaze And Parmesan Shards

Bring the vinegar to a boil in an 8-inch skillet over medium-high heat
- 3/4 C. balsamic vinegar
- Broiled asparagus
- 1/4 C. extra-virgin olive oil
- 1/4 C. shaved Parmesan cheese

- Syrup:
- 3 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp salt
- 1 cup shortening
- 3/4 cup milk
- 3 large Granny Smith, Winesap, or other cooking apples
- 1 tbsp sugar
- 1 1/2 tsp ground cinnamon
- 2 tbsp butter or margarine
- 3 tsp sugar
- 1 1/2 tsp cinnamon
- 1 1/2 cup sugar
- 1 cup orange juice
- 1 tbsp butter or margarine
- 1/4 tsp ground cinnamon
- 1/4 tsp ground nutmeg
Jewish Apple Cake

Preheat oven to 350. Mix together apples, sugar and cinnamon and set aside

- 3 C. sifted all purpose flour

- 2 C. granulated sugar
- 1 C. cooking oil
- 1/4 C. orange juice
- 2 1/2 tsp. vanilla
- 4 eggs
