Spice Tea

Combine all ingredients and store in a sealed container
- 3/4 C. instant tea
- 2 C. orange flavored instant breakfast drink (Tang)
- 1 3 oz. pkg. Lemonade drink mix
- 1 1/2 C. sugar
- 2 tsp. cinnamon
- 1 tsp. cloves
- 1/4 tsp. salt
Crème Fraiche

Combine the heavy cream and buttermilk
- 1 C. Heavy cream
- 2 tbsp. Buttermilk
Cranberry-Orange Relish

Pulse cranberries in a food processor until coarsely chopped
- 2 C. fresh or thawed frozen cranberries
- 1/4 C. finely chopped red onion
- 1 large fresh jalapeno, seeded and finely chopped
- 2 blood or navel oranges, peeled with pith removed, flesh separated into segments, juice reserved
- 2 tbsp. Fresh lime juice
- 2 tsp. grated fresh peeled ginger
- 1/2 C. sugar
- 2 celery stalks, cut into 1/4-inch dice
- 1/4 C. fresh mint leaves, coarsely chopped
- 1/4 C. pecans, toasted and coarsely chopped
Black Bean Cakes

- Bean Cakes:
- 4 cans black beans
- 1/2 C. salsa
- 1/2 C. finely diced red onion
- 1 1/4 red bell peppers, finely diced
- 1/4 C. chopped fresh cilantro
- 2 C. breadcrumbs or crushed wheat grain Kavli crackers
- 1 tbsp. diced jalapeño pepper
- 1/2 tsp. Tabasco sauce
- 1 tsp. Tabasco jalapeño sauce
- Olive oil for sautéing
- 1 tsp. ground cumin
- 1 tsp. ground coriander
Mandarin Orange Chicken

Fry chicken breasts in oil over medium high heat (about 4 minutes on each side), sprinkle with salt and pepper
- 2 tsp. dark sesame oil
- 4 skinless, boneless chicken breast halves
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 (11 oz.) can mandarin oranges in light syrup, undrained
- 1/2 C. chopped green onions
- 1 tbsp. finely chopped and seeded jalapeno pepper
- 2 cloves minced garlic
- 1/2 C. chicken broth
- 1 tbsp. soy sauce
- 2 tsp. cornstarch
Lucky 32 Crab Cakes

Carefully pick all shells out of crab meat and set aside
- 1 1/2 lb. blue crab meat
- 2 eggs
- 4 1/2 tsp. mayonnaise
- 1 tbsp lemon juice
- 1 1/2 tsp Old Bay seasoning
- 1 tsp. ground mustard
- 1 tbsp. grated parmesan cheese
- 2 1/2 tbsp. diced celery
- 2 1/2 tbsp. diced green bell pepper
- 2 1/2 tbsp. diced onion
- 1 tbsp. chopped fresh parsley
- 1 C. bread crumbs
- 2 C. corn meal (to dredge)
- 3 tbsp. oil (to sauté)
Blueberry Muffins

Preheat oven to 400. Cream butter, add sugar, beat; add egg and beat well
- 1/4 C. butter
- 3/4 C. sugar
- 1 egg
- 2 C. sifted flour
- 2 tsp. baking powder
- 1/2 tsp. Salt
- 1/2 C. milk
- 2 C. blueberries

- 1/2 C. sugar
- 1/4 C. soft butter
- 1/3 C. flour
- 1/2 tsp. cinnamon
Buffalo Chicken Dip

- 2 blocks of cream cheese, softened
- 1 C. Ranch dressing
- 1 bottle of hot sauce or wing sauce
- 3 boneless chicken breasts (boiled and shredded)
- 1 bag of Colby & Jack shredded cheese
Crazy Chocolate Cake

Also called Wacky Cake. Not sure who came up with this but Kurt says it smacks of central Pennsylvania
- 1 1/2 C. cake flour
- 1 C. sugar
- 3 tbsp. unsweetened cocoa
- 1 tsp. baking soda
- 1/2 tsp. salt
- 6 tbsp. melted shortening or salad oil
- 1 tbsp. vinegar
- 1 tsp. vanilla
- 1 C. cold water
Tabbouleh

Combine the bulgur, water, lemon juice, and 1/3 cup olive oil in a large bowl
- 1 heaping C. bulgur
- 1 C. cold water
- 1/2 C. fresh lemon juice
- 2/3 C. extra virgin olive oil
- 1 C. coarsely chopped fresh mint leaves
- 1 C. coarsely chopped fresh Italian (flat-leaf) parsley
- 1/2 C. finely diced red onion
- 2 tsp. minced garlic
- 1 tsp. coarsely ground black pepper
- 1/2 tsp. Salt
- 4 ripe plum tomatoes, seeded and cut into 1/2 inch dice
- 1 large cucumber, peeled, seeded, and cut into 1/2 inch dice
- Fresh mint leaves, for garnish
