  • 1/2 C. finely diced red onion
  • 1 1/4 red bell peppers, finely diced

  • 1 tbsp. diced jalapeño pepper

  • Olive oil for sautéing

Combine the bulgur, water, lemon juice, and 1/3 cup olive oil in a large bowl

  • 1 heaping C. bulgur
  • 1 C. cold water
  • 1/2 C. fresh lemon juice

  • 1 C. coarsely chopped fresh Italian (flat-leaf) parsley

  • 4 ripe plum tomatoes, seeded and cut into 1/2 inch dice
