I actually made this for dinner when we lived on Velinda Drive - before kids!
- 1/4 cup olive oil
- 1/4 cup chopped onion
- 1 clove garlic, mashed
- 1 tbsp. finely minced parsley
- 1 tsp. salt
- 1/4 tsp. pepper
- 3 cans (8 oz) tomato sauce
- 1 eggplant
- 1 lemon
- 1 tbsp. olive oil
- 1/4 cup milk
- flour
- oil for frying
- 8 oz sliced mozzerella cheese
- 1/2 cup grated parmesan cheese
Arugula Salad With Pears, Ham & Blue Cheese With Fig Vinaigrette

For vinaigrette: In large skillet, melt butter over low heat
- Vinaigrette:
- 2 tbsp. butter
- 2 C. coarsely chopped dried figs
- 3/4 C. sugar
- 3/4 C. cider vinegar
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 2 C. salad oil
- Salad:
- 8 C. Arugula leaves or small spinach leaves
- 2 Bartlett or other pears, sliced into 1/4-inch-thick wedges
- 4 oz. Cooked Smithfield ham or prosciutto, cut into julienne strips
- 4 oz. Maytag blue cheese
- Freshly cracked black pepper

Curried Chicken Salad

- 1 (3 lb.) chicken
- 1/2 C. celery, diced
- 1 apple, cored and diced
- 1/2 C. onion, diced
- 1/2 C. seedless grapes, halved
- 1/3 C. slivered almonds, toasted

- 1 C. mayonnaise
- Salt and pepper to taste

- 2 cups instant long-grain white rice such as Uncle Ben's
- 1/4 cup dry white wine
- 1 1/4 cups reduced-sodium chicken broth (10 fl oz)
- 1/8 teaspoon crumbled saffron threads
- 20 frozen cleaned raw medium shrimp
- 1 1/4 lb cockles or other very small (1-inch-wide) hard-shelled clams, scrubbed

- 2 cups unbleached all-purpose flour
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 2 sticks unsalted butter, softened
- 1/2 cup granulated sugar
- 1 cup packed light brown sugar
- 2 tsp. vanilla extract
- 2 large eggs
- 1 1/2 cups semisweet chocolate chips or 9 oz. god dark chocolate, broken into pieces
- 2 cups rolled oats (not quick cook or instant)
