In a small saucepan, bring the water to a boil
- 2 cups water
- 1/2 cup steel-cut oats
- 2 tablespoons dried cranberries
- 1 tablespoon soy milk
- 1 teaspoon slivered almonds
- 2 teaspoons real maple syrup
- 3/4 teaspoon ground cinnamon
- 1/8 teaspoon real vanilla extract

- 5 chicken thighs, (bone in and skin on or off)
- 2 tablespoons low sodium soy sauce
- 2 tablespoons honey
- 2 tablespoons minced garlic, divided (or 6 cloves garlic, crushed)
- 2 tablespoons hoisin sauce, divided
- 1 tablespoon rice wine vinegar, or Shaoxing (Chinese) wine
- 1 teaspoon sesame oil
- ground white pepper, to season
- 1 large onion, chopped
- 2 1/2 cups chicken broth (or stock)
- 1 1/2 cups long-grain white rice
- 1/2 cup water
- 1 tablespoon oyster sauce
- 1/2 teaspoon Chinese five spice powder, optional
- 3/4 cup frozen peas, corn and carrots (thawed)
- Chopped fresh green onions/scallions or shallots
Easy Slow Cooker Chicken

Cut chicken breasts into large chunks
- 4 skinless, boneless chicken breast halves
- 1 (10.75 ounce) can condensed cream of chicken soup
- 1 (10.75 ounce) can condensed cream of mushroom soup
- 1 (10.75 ounce) can condensed cream of celery soup
- 1 cup white rice
Linguine with Rach's Cupboard Red Clam Sauce

Bring a large pot of water to a boil for the pasta
- Salt
- 1 pound linguine
- 3 tbsp. EVOO, 3 times around the pan
- 1 tin flat anchovy fillets, 2 ounces, drained
- 1/2 tsp. red pepper flakes
- 1/4 tsp. dried oregano leaves, a couple of pinches
- 1 tsp. dried thyme leaves, 1/3 palmful
- 5 to 6 garlic cloves, finely chopped
- 1 small onion, finely chopped
- 1/2 cup dry red wine
- 2 14-ounce cans whole baby clams in juice
- 1 28-ounce can crushed tomatoes
- Black pepper
- 2 handfuls of chopped fresh flat-leaf parsley
- Lemon zest, for garnish
Meatball Subs

Preheat oven to 400 degrees F
- For Meatballs:
- 1/2 pound ground beef
- 1 tablespoon garlic, chopped
- 1/2 cup Italian seasoned bread crumbs or panko bread crumbs
- 2 tablespoons finely chopped fresh parsley leaves
- 2 tablespoons grated Parmesan
- 1 egg
- Salt and freshly ground black pepper
- 2 tablespoons canola oil
- 1 cup tomato sauce, jarred or homemade, recipe follows
- 1/2 cup shredded mozzarella
- For the Subs:
- 2 sub rolls
Parmesan-Crusted Pork Chops | Giada De Laurentiis

Whisk the eggs in a pie plate to blend
- 2 large eggs
- 1 cup dried Italian-style bread crumbs
- 3/4 cups freshly grated Parmesan
- 4 (1/2 to 3/4-inch thick) center-cut pork loin chops (each about 10 to 12 ounces)
- Salt and freshly ground black pepper
- 6 tablespoons olive oil
- Lemon wedges, for serving

- 4 tablespoons of ghee
- 4 garlic cloves, pressed
- 1 tsp basil
- 1 tsp oregano

- 1 pound peeled, de veined shrimp (tail off)
- 1/2 yellow pepper, julienned (thinly sliced)
- 5 sundried tomatoes sliced (in oil)
- 2 tablespoons jarred sundried tomato oil
- 2 tablespoons chopped fresh basil
- 2 tablespoons chopped fresh parsley
- 2 cloves garlic thinly sliced
- 1/4 cup of your favorite reasonably priced white wine
- 2 tablespoons freshly grated Parmesan
- 1/4 teaspoon crushed red pepper
