- 1 tablespoon olive oil
- 1 shallot, finely minced
- 1 cup long-grain rice (I like basmati)
- 2 cups liquid (1 1/4 cups broth, 1/4 cup lemon juice, 1/2 cup white wine)
- 1 teaspoon sea salt
- 1 tablespoon parsley, chopped
- zest of 1 lemon

Cabbage Roll Soup

In large bowl, mix beef, pork, egg, rice, onion and garlic
- 8 oz ground beef
- 8 oz ground pork
- 1 egg, beaten
- 3/4 C uncooked rice
- 1 med onion, minced
- 1 small clove garlic, minced

- 8 C chicken broth

Refried Bean-Taco Pizza Recipe

In a large skillet, cook beef and onion over medium heat until no longer pink; drain
- 1-1/4 pounds ground beef
- 1 small onion, chopped
- 1/2 cup water
- 1 envelope taco seasoning
- 1 prebaked 12-inch pizza crust
- 1 can (16 ounces) refried beans
- 2 taco shells, coarsely crushed
- 1 cup shredded cheddar cheese
- 1 cup shredded part-skim mozzarella cheese
- 2 cups torn iceberg lettuce
- 2 medium tomatoes, chopped
- 1 tablespoon sliced ripe olives

1. Sauté onions and garlic in olive oil until translucent
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1 tablespoon olive oil
- 1 lb ground beef, browned and drained
- 1 (16 ounce) can stewed tomatoes
- 1 (16 ounce) can tomato sauce
- 1 (16 ounce) can water
- 8 ounces elbow macaroni, uncooked
- salt, to taste
- pepper, to taste
- parmesan cheese (optional)
Orzo with Tuna, Corn, and Asparagus

In a large pot of boiling salted water, cook orzo according to package instructions
- 1/2 pound orzo
- 1 bunch asparagus (1 pound), trimmed and cut into 1-inch pieces
- 2 cups corn kernels (from 3 ears)
- 2 tablespoons red-wine vinegar
- 2 tablespoons extra-virgin olive oil
- 2 teaspoons Dijon mustard
- 1 pint (10 ounces) cherry tomatoes, halved
- 2 cans (5 ounces each) solid white tuna packed in water, drained and flaked
- Coarse salt and ground pepper
- 2 tablespoons fresh oregano leaves
Homemade Beefaroni

1. Brown ground beef in a sauce pan and drain
- 1 lb. ground beef
- 2 14.5 oz cans tomato sauce
- 1/2 c. grated Parmesan cheese
- 1/4 c. water
- 1 T. sugar
- 1 t. each garlic powder, salt and Italian seasoning
- 1/4 t. black pepper
- 1 lb. cooked pasta (I used the new Barilla piccolini ziti, because of it’s closeness in shape to the traditional beefaroni noodles, but any shape would be fine.)
Chicken Parmesan Stuffed Shells

Pre-heat oven to 375-degrees
- 1 (appx. 1 lb) box large/jumbo pasta shells
- 8-10 breaded chicken strips, cooked (I just used the packaged, frozen parmesan-crusted ones)
- 1 lb. mozzarella cheese (in a block)
- 1 jar (quart-size) spaghetti sauce (I used our spaghetti sauce recipe HERE )
- shredded mozzarella/Parmesan blend, to taste
- fresh basil, chopped, to taste
