- 1 medium onion , cut into 1/2-inch chunks
- 2 stalks celery , cut into 2 pieces
- 1 butternut squash (about 3 1/2 pounds), peeled, seeded and cut into 1/2-inch chunks
- 6 cups vegetable or chicken stock
- 2 teaspoons fennel seeds
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ground cardamom
- 1 bay leaf
- 3 McIntosh apples , peeled, cored and cut into 1/2-inch chunks
- 2 tablespoons apple cider vinegar

- 2 bird's-eye chilies, seeds and ribs removed, finely chopped

- 1 1/2 teaspoons coriander seeds, crushed
- 2 cups chicken stock or broth
- 1 cup coconut milk
