  • 13 tablespoons (1 stick plus 5 tablespoons) butter
  • 6 ounces semisweet chocolate (60 percent)
  • 3 1/2 ounces unsweetened chocolate
  • 3/4 cup granulated sugar
  • Pinch salt

  • Cake:
  • 16 tablespoons (2 sticks) butter , softened
  • 3 cups firmly packed dark brown sugar
  • 4 large eggs

  • 1 butternut squash (about 3 1/2 pounds), peeled, seeded and cut into 1/2-inch chunks
  • 6 cups vegetable or chicken stock
  • 2 teaspoons fennel seeds
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground cardamom
  • 1 bay leaf
  • 3 McIntosh apples , peeled, cored and cut into 1/2-inch chunks
  • 2 tablespoons apple cider vinegar
  • Kosher salt and freshly ground pepper
