Cream of Vegetable Soup

Heat sauce pan to medium heat and add butter
- 1 cup vegetables *see note below
- 1 small onion; diced
- 2 garlic, minced
- 2 cups vegetable stock.
- 2 tsp. corn flour
- 1 TB butter
- 1/4 cup milk
- 1/4 cup heavy cream
- 1/4 cup grated cheese
- pepper and salt to taste
- Vegetable Note: yellow and green bell peppers, carrots, peas. Also cut the vegetable to small thin pieces. You can also use cauliflower, broccoli, beans, corns .... choices are endless
PEANUT BUTTER KISS COOKIES

Combine ingredients. Roll into balls, roll balls in sugar
- 1 3/4 c. flour
- 1/2 c. sugar
- 1/2 c. brown sugar
- 1 tsp. soda
- 1/2 tsp. salt
- 1/2 c. butter
- 1/2 c. peanut butter
- 1 egg
- 2 tbsp. milk
- 1 tsp. vanilla
Basmati Rice with Flax Seeds and Garbanzo Beans

For the rice: Bring 4 cups water to a boil in a medium saucepot
- Rice:
- 2 cups basmati rice
- 1/4 cup flax seed
- 1/2 small onion, diced
- 5 cloves garlic, chopped
- 2 teaspoons kosher salt
- Beans:
- 3 tablespoons olive oil
- 1/2 small onion, diced
- 2 cloves garlic, chopped
- One 15-ounce can garbanzo beans, drained and rinsed
- 1 teaspoon dried thyme
- 1/2 cup chicken broth

- 1 cup shortening
- 3/4 cup white sugar
- 1 egg
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon baking powder
- 1 teaspoon almond or vanilla extract

Spicy Roasted Vegetable Macaroni and Cheese

Preheat oven to 400 degrees F
- 1 cup broccoli florets, chopped into small chunks
- 1/2 red pepper, diced
- 1 yellow squash, quartered and diced
- 10 baby carrots, sliced thinly
- 2 cups whole wheat pasta (elbow macaroni, rotini, penne, etc.)
- 1/4 cup olive oil
- 1 garlic clove, minced
- 3 Tbsp. all-purpose flour
- 1 1/2 cups milk
- 2 cups (8 oz.)Shredded Sharp Cheddar Cheese
- 1/2 tsp. crushed red pepper flakes
- 1/2 tsp. cayenne pepper
- Salt and pepper, to taste
- 2 Tbsp. panko breadcrumbs

- 1/4 cup all-purpose flour
- 2 tsp pumpkin pie spice
- 1/3 cup cold butter
- 1 cup chopped pecans
- Batter:
- 1/2 cup butter, softened
- 3/4 cup sugar
- 3 eggs
- 1 tsp vanilla extract
- 2 cups all-purpose flour (I used 1 cup whole wheat, 1 cup regular)
- 1 tsp baking powder
- 1 tsp baking soda
- 1 cup (8 oz) sour cream (I used fat free)
- Filling:
- 1 can (15 oz) solid-pack pumpkin
- 1 egg, lightly beaten
- 1/3 cup sugar
