- 1 lb lean ground beef (sub portabello mushrooms for veggie)
- 1/2 yellow onion, grated or finely chopped
- 2 tsp smoked paprika
- 1 tsp cumin
- 1 Tbsp chili powder
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 (14.5-oz) can diced tomatoes
- 1 (15-oz) can black beans, drained and rinsed
- 1 1/2 cups frozen sweet corn
- 1 (4-oz) can fire roasted diced green chiles
- 1 (10-oz) can enchilada sauce
- 12 (8-in) large flour tortillas
- 12 oz Mexican cheese blend
- 6 oz can sliced olives, drained
- 2 scallions, finely chopped
- 2 Tbsp chopped cilantro

- Few shakes of cinnamon (optional)
- Pinch of cloves
- 1 tsp vanilla
- 4-5 ice cubes
Byerly's Wild Rice Soup

Wild rice soup can be made using chicken broth and ham, or vegetable broth and mushrooms for a vegetarian option
- 6 tablespoons butter
- 1 tablespoon onion, minced
- 1/2 cup flour
- 3 cups chicken broth or vegetable broth
- 2 cups wild rice, cooked
- 1/3 cup cooked ham, diced or mushrooms, diced
- 1/2 cup carrot, finely shredded
- 3 tablespoons slivered almonds, chopped
- 1/2 teaspoon salt
- 1 cup half-and-half
- 2 tablespoons dry sherry
- Snipped parsley or chives, for garnish

- 1/2 cup all-purpose flour
- 1/4 cup packed light brown sugar
- 1/4 tsp ground cinnamon
- Pinch of Kosher salt
- 4 Tbsp cold butter
- BREAD
- 8 Tbsp (1 stick) melted butter
- 1 1/2 cups granulated sugar
- 1 cup pumpkin purée
- 1/3 cup milk
- 2 eggs
- 2 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp ground cinnamon
- 1 tsp baking soda

- 1 25-ounce package frozen cheese-filled ravioli
- 3 cups shredded Italian cheese mix
