- 1/4 cup pickled jalapeno, roughly chopped
- 1 tablespoon pickled jalapeno juice
- 1 fresh jalapeno, finely minced
- 1 pasilla chile, julienned
- 1 russet potato, shredded
- 1 tablespoon chopped fresh cilantro
- 1 teaspoon sea salt
- 1 egg, beaten
- 2 tablespoons all-purpose flour
- 1 tablespoon cooking olive oil
- Chipotle Mayonnaise, for serving, recipe follows

In a large sauté pan over high heat, add olive oil until shimmering

- 1 pound mushrooms (cremini or white, thinly sliced)
- 3 shallots (separated)
- 1 cup marsala wine

Skinny Egg Salad

Instructions You can cut or mash eggs with a fork, but I prefer to mash everything together with my hands
- 6 hard-boiled eggs, chilled and peeled
- 1/3 cup plain nonfat Greek yogurt
- 2 tablespoons Mayo (optional for added creaminess)
- 1/2 teaspoon lemon zest and 1 1/2 teaspoon lemon juice from 1 lemon
- 1/3 cup finely diced celery (about 1 small stalk)
- 1 tablespoon minced fresh parsley leaves
- 1 teaspoon dried dill weed (optional- I just really love dill)
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic salt
