Spicy Chipotle Shredded Chicken

Instructions Mince the chipotle peppers and garlic cloves
- 3 individual chipotle peppers in adobo sauce + 1 teaspoon of their sauce
- 4 cloves garlic
- 1 tablespoon oil
- 1 cup freshly squeezed orange juice (store bought is fine - I just use my own so there's no added sugar)
- 1 1/2 cups reduced sodium chicken broth
- 1/2 cup light beer (or replace with 1/2 cup broth)
- 1/2 cup fresh cilantro, chopped
- 1 pound boneless skinless chicken breasts
- 2 teaspoons yellow mustard

- 5 cups romaine lettuce, bite-size
- 5 cups iceberg lettuce, bite-size
- 1 small red onion, peeled and thinly sliced
- 4 ounces blue cheese, crumbled

- 1 tablespoon Dijon mustard

Pat's Pulled Pork Tacos

Preheat the oven to 325 degrees F
- 1 teaspoon dried oregano
- 1 teaspoon chipotle chili powder
- 1 teaspoon ground cumin

- 1/4 cup agave nectar

Pound chicken breasts to ½ inch thick
- 4 boneless skinless chicken breasts
- 1/2 red pepper, finely sliced
- 8 oz bean sprouts
- 1 tablespoon oil
- 4 cloves garlic, minced
- 1 tablespoon fresh grated ginger
- 4 scallions, chopped & divided
- 1 package fresh egg noodles (8-10 oz. Asian style)
- 1/2 cup Hoisin sauce

- 1/2 cup chicken broth (we use low sodium)
- 4 tablespoons soy sauce

- 1/4 cup extra-virgin olive oil

Instructions In a food processor add chickpeas, nut/seed butter, milk, pitted dates and vanilla
- 1 can chickpeas (drained and rinsed)
- 1/2 cup salted smooth nut/seed butter (peanut butter, almond butter, sunbutter...)
- 1/2 cup milk (almond, coconut, cow's milk...)
- 6-8 pitted soft dates
- 1 tsp vanilla
- 1/2 cup mini chocolate chips
