- 8 dried Red Chile Pods
- 2 cloves Garlic, chopped
- 1 Onion, chopped
- Water
- 2 tbsp Flour
- 2 cups Water
- 1 tsp Mexican Oregano
- 1/4 tsp Cumin
- 1/2 tsp Salt
Simple Low Fat Whole Grain Crêpe

Zucchini Salad

This dish meets all the requirements for the perfect potluck take-along
- 6 slices bacon
- 1 teaspoon minced garlic
- 1 cup chopped onion
- 1 cup chopped bell pepper
- 3 14.5-ounce cans diced tomatoes with liquid
- 1 2.25-ounce can sliced ripe black olives, drained
- 1 –2 tablespoons dried oregano, according to taste
- 1 pound ground beef, browned and drained
- 12 ounces thin spaghetti, cooked and drained
- 2 cups grated cheddar cheese (5 ounces)

Mix Sauce ingredients in a bowl

Steak with Creamy Peppercorn Sauce

Instructions Take the steaks out of the fridge 20 minutes before planning to cook
- Sauce:
- 2 2 300g/10oz 1) 300g/10oz New York Strip / Porterhouse steaks (or other of choice, Note 1)
- Salt and pepper
- 1 1 1 tbsp vegetable oil
- 1/3 1/3 85 2) / 85 ml brandy or cognac (or marsala) (Note 2)
- 3/4 3/4 185 3) / 185 ml beef broth , low sodium (important! Note 3)
- 1/2 1/2 125 cup / 125 ml heavy / thickened cream
- 2 3 2 3 2 - 3 tsp coarsely crushed whole black peppercorns (or canned green peppercorns, drained)

Serve sauce while warm In a large saucepan (I used my Le Crueset stock pot) heat all of the ingredients
- 2 12 oz. cans of tomato sauce
- 1 1/2 tsp. liquid smoke
- 1 1/2 tsp. hot sauce (such as Tabasco, etc.)
- 1/2 cup of ketchup
- 1/3 cup brown sugar
- 1 Tablespoon Chili powder
- 1/2 tsp onion powder
- 1/2 tsp of garlic powder
- 1 tsp of salt
