- 5 ripe plum tomatoes (about 1 pound) cored and seeds removed
- 1 cup coarsely chopped white onion
- 1 large clove garlic
- 1/2 cup cilantro, loosely packed
- 1 tablespoon Victoria Taylor’s Cinnamon Chile Rub
- 5 cups chicken broth
- 2 cups shredded chicken (See Tip)
- 1 can (15.25 ounces) corn kernels with liquid
Spicy Italian Chicken Casserole

Juicy chicken with crispy skin in a spicy tomato sauce with bell peppers, olives and capers
- 5 chicken thighs , skin on, bone in (about 200g / 7 oz each)
- Salt and pepper
- 2 tsp olive oil
- 2 garlic cloves , minced
- 1 medium onion , finely chopped
- 1 EACH red and green capsicum / bell pepper , sliced
- 1/2 cup / 125 ml white or red wine (any is fine, I use dry white)
- 800 g / 28 oz can crushed tomato
- 3/4 cup / 185 ml water , swilled in empty tomato can
- 1 tsp red pepper flakes (chilli flakes), adjust to taste
- 3/4 cup black olives , pitted (or 1/3 cup sliced)
- 2 tbsp baby capers
- Salt and pepper to taste
- 1/4 cup finely chopped parsley

- 12 oz. raw boneless skinless lean chicken breast, pounded to 1/2-inch thickness
- 1/8 tsp. curry powder

- 1/3 cup plain light soymilk
- 2 tbsp. reduced-fat peanut butter, room temperature
- 1 1/2 tbsp. reduced-sodium/lite soy sauce
- 1 tsp. granulated sugar
- 1/4 tsp. crushed garlic
- 1/4 tsp. dried minced onion
- 1/8 tsp. cayenne pepper

- 1 pound boneless skinless chicken breasts, cut into strips
- 2 tablespoons canola oil, divided
- 2 cups fresh broccoli florets
- 1 cup julienned carrots
- 1/4 cup salted peanuts, finely chopped
Chicken Chorizo Patty Melt

Patties: In a large bowl, gently but thoroughly combine all ingredients
- Patties:
- 1 pound ground chicken
- 6 ounces fresh chorizo
- 2 cloves garlic, minced
- 2 tablespoons chopped fresh oregano leaves
- 1 teaspoon kosher salt
- Onions:
- 1 tablespoon butter
- 1 tablespoon vegetable oil
- 1 large or 2 regular Vidalia or sweet onions, halved and sliced
- Kosher salt and freshly ground black pepper
- 4 tablespoons vegetable oil
- 4 flat bread, naan or pita, halved
- 8 to 10 slices Jarlsberg or Swiss cheese

Shrimp Ceviche "Cocktail"

- 1 quart salted water
- 1/2 cup plus 2 tablespoons freshly squeezed lime juice
- 1 generous pound unpeeled small shrimp (about 41 to 50 count to a pound)
- 1/2 medium white onion, chopped into 1/4-inch pieces
- 1/3 cup chopped fresh cilantro, plus several sprigs for garnish
- 1/2 cup ketchup
- 1 to 2 tablespoons vinegary Mexican bottled hot sauce (such as Tamazula, Valentina or Bufalo)
- 2 About 2 tablespoons olive oil, preferably extra-virgin (optional, but smoothes out sharpness)
- 1 cup peeled, diced cucumber or jicama (or 1/2 cup each)
- 1 small ripe avocado, peeled, pitted and cubed
- Salt
- Several lime slices, for garnish
- Tostadas or tortilla chips or saltine crackers, for serving
