Hummus bi Tahini

Hummus is a popular appetizer, or meze, throughout the Middle East
- 2 cups Chickpeas, cooked and drained
- 1/4 to 1/2 cup Tahini (sesame paste)
- 1/4 cup Lemon juice
- 2-4 cloves Garlic, crushed
- 1/2 t Salt
- Water -- as needed
- 1/4 cup Olive oil
- 1-2 T Parsley, minced

- 3 ounces diced pancetta (or bacon if you can't find pancetta)
- 6 tablespoons extra virgin olive oil, plus more for the pasta
- 2 anchovy fillets
- 1 cup coarse fresh bread crumbs*
- 4 tomatoes, tops sliced off, seeds scooped out
- 2 cloves garlic, thinly sliced
- small handful fresh thyme, parsley or basil leaves, chopped

100% Whole Wheat Banana Muffin

Preheat the oven to 375 degrees
- 1 1/4 C whole wheat flour
- 1/2 t baking soda
- 1/2 t baking powder
- 1/4 t salt
- 2 egg whites
- 1 large overripe banana
- 1/2 C plain non-fat yogurt
- 1 T honey
- 1 T molasses
- 1/4 C applesauce
- 1 t almond extract
- 1 T quick oats

Whisk together the baking soda, sugar, cornstarch, soy sauce, water, and vegetable oil in a large bowl

- 1 t sugar
- 1 T cornstarch
- 1 T low-sodium soy sauce
- 1 T water
- 2 T vegetable oil
- 1 1/2 lbs flank steak, sliced into thin strips
- 1/2 c low-sodium soy sauce
- 2 T brown sugar
- 4 cloves garlic, minced
- 2 T flour
- 1 T sherry (I used rice wine vinegar)
- 3 T vegetable oil
- 2 heads broccoli, crowns only
