Italian Rice Pie

This Italian rice pie (torta di riso) has been an Easter staple in my family for generations
- Crust:
- 1 1/2 cups all-purpose flour
- 1/4 cup sugar
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 3/4 stick unsalted butter (chilled)
- 1 extra large egg or 2 small eggs
- 1 to 2 tablespoons ice water, or as much as needed
- Rice Filling:
- 1/2 cup uncooked Arborio rice
- 4 cups of water OR whole milk
- 7 large eggs
- 1 cup sugar
- 2 teaspoons lemon extract (or the zest and juice of 1 small lemon, preferably Meyer)
- 2 teaspoons pure vanilla extract
- 1 pound ricotta cheese, drained (minimum of 2 hours or preferably overnight)

Prepare the dough: Sift together the cocoa powder, flour and salt in a large bowl
- For the Dough:
- 1 1/3 cups Dutch-process cocoa powder
- 1 1/2 cups all-purpose flour, plus more for dusting
- 1/4 teaspoon salt
- 2 sticks unsalted butter, softened
- 2 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- For the Filling:
- 1 stick unsalted butter, softened
- 1/2 cup vegetable shortening
- 3 cups confectioners' sugar, sifted
- 1 teaspoon vanilla extract

Bring a large pot of water to a boil
- 6 ounces whole-wheat angel hair pasta
- 1/3 cup all-purpose flour, divided
- 2 cups reduced-sodium chicken broth
- 1/2 teaspoon salt, divided
- 1/4 teaspoon freshly ground pepper
- 4 chicken cutlets, (3/4-1 pound total), trimmed
- 3 teaspoons extra-virgin olive oil, divided
- 1 10-ounce package mushrooms, sliced
- 3 large cloves garlic, minced
- 1/2 cup white wine
- 2 tablespoons lemon juice
- 1/4 cup chopped fresh parsley
- 2 tablespoons capers, rinsed
- 2 teaspoons butter
