Simple and delicious Skinny Tuna Cakes with a yummy Chipotle mayonnaise spread
- CHIPOTLE MAYO:
- 2 (5-ounce) cans white tuna in water
- 1/2 tablespoon Old Bay Seasoning
- 1/2 cup onion, chopped
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 egg whites
- 1/4 cup plain Panko bread crumbs
- 1/4 cup Miracle Whip
- 2 teaspoon chili powder
- 1 teaspoon lime juice
Creamy Italian Chicken (stove top)

Mix flour and 1 tablespoon of the Seasoning in shallow dish
- 2 T flour
- 2 T McCormick® Perfect Pinch® Roasted Garlic & Bell Pepper Seasoning , divided
- 1 lb boneless skinless chicken breasts, cut into 1-inch chunks
- 1 T oil
- 1/2 C sliced red bell pepper
- 1 C heavy cream
- Hot cooked pasta (optional)
Roasted Pork Shanks

Preheat oven to 425 degrees F
- 4 whole pork shanks, 2 1/2 to 3 pounds each
- Salt
- Freshly ground black pepper
- 6 tablespoons extra virgin olive oil
- 2 large carrot, trimmed and chopped
- 1 large onion, quartered
- 3 cups Mixed Meat Stock or Chicken Stock
- 6 garlic cloves, peeled and crushed
- 2 branches fresh rosemary
- 6 fresh sage leaves
- 1 cup dry white wine

- 2 sticks unsalted butter
- 2 1/4 cups bread flour
- 1 teaspoon kosher salt
- 1 teaspoon baking soda
- 1/4 cup sugar
- 1 1/4 cups brown sugar
- 1 egg
- 1 egg yolk
- 2 tablespoons milk
- 1 1/2 teaspoons vanilla extract
- 2 cups semisweet chocolate chips
- Ice cream scooper (#20 disher, to be exact)

Bagna Cauda Broccoli

Heat the oven to 425 degrees
- 2 heads of broccoli, chopped into florets
- 3 T unsalted butter
- 1 T, give or take, of olive oil
- 2 cloves of garlic, minced
- 2 anchovy fillets
- a generous splash of white wine (I used pinot grigio and it worked fine; just no oaky chardonnay)
- half a lemon, squeezed (Food 52 asks for Meyer, but I had a plain lemon)
- Parmesan cheese
- 1/4 cup nuts (slivered almonds, walnut pieces or pine nuts would all work well; Food 52 asks for almonds, but I only had walnuts, and they were tasty)
Chili's Chocolate Chip Paradise Pie

Preheat oven to 325 degrees
- 1 1/2 cup butter, melted
- 3 cups firmly packed brown sugar
- 6 eggs
- 3 tsp. vanilla
- 3 cups flour
- 1 tsp. baking powder
- 1 cup chopped walnuts
- 1 cup coconut
- 2 cups milk chocolate chips
- caramel sauce
- hot fudge sauce
- more chopped walnuts (optional, I only had enough to make the pie but more to go on top would have been fabulous)
Quick Lime Cilantro Chicken

Mince the garlic, snip the cilantro and zest a lime
- Boneless Chicken, 3 breasts
- Limes, 3 or 4
- Garlic, 4 to 6 cloves
- Olive Oil
- Cumin
- Cayenne or Chili Powder
- Cilantro, 1/4 cup, snipped
- Avocado, optional
Tomato Sauce with butter and onion

- 28 ounces (800 grams) whole peeled tomatoes from a can (San Marzano, if you can find them)
- 5 tablespoons (70 grams) unsalted butter
- 1 medium-sized yellow onion, peeled and halved
- Salt to taste
Schiacciata - Classic Tuscan Flatbread

Pour 1 cup lukewarm water into small bowl; sprinkle with yeast
- 1 cup lukewarm water (90°F to 100°F)
- 2 1/4-ounce packages dry yeast or two 0.6-ounce packages fresh yeast, crumbled
- 2 1/2 cups (about) all purpose flour
- 4 tablespoons extra-virgin olive oil
- 1 tablespoon coarse sea salt
- NOTE: Drizzle with olive oil before baking.
- NOTE: You can knead with a little olive oil to keep from adding more flour and prevent dryness.
- Optional: Add herbs of your choice and/or a grated favorite cheese. I have used rosemary, oregano, basil, red pepper flakes, cracked black pepper, asiago, and parmesan in various combinations and it all worked out well.
