Italian Tomato Sauce

Before you begin, pour your two cans of tomatoes into a bowl and crush with your hand
- 1/3 C good quality extra virgin olive oil
- Pinch of red pepper flakes
- 4 crushed garlic cloves
- 3/4 C chopped onion (optional)
- 1 t fresh chopped oregano, divided, or 1/2 teaspoon dried
- 1 T chopped fresh basil, divided, or 1/2 tablespoon dried
- 1 t fresh chopped mint, divided
- 1 t sugar
- 1 t salt
- 1/4 t freshly ground black pepper
- 2 28-ounce cans of whole tomatoes or two quarts of freshly canned garden tomatoes
- 1/4 C freshly grated Parmesan cheese
- 2 tablespoons unsalted butter
Baked Rigatoni with tiny meatballs

When I first realized that this “baked ziti” lacked a tomato sauce, I had my doubts
- For the meatballs:
- 1/4 cup milk
- 1 slice good white bread trimmed of its crust
- 1 pound ground pork (or beef, or lamb, or a mix of the three)
- 1 teaspoon chopped garlic
- 2 tablespoons chopped parsley
- 1/3 cup freshly grated parmigiano-reggiano (Parmesan)
- 1 egg
- Salt
- Black pepper in a grinder
- 1 cup flour, spread on a plate
- Vegetable oil for frying
- For the bèchamel:
- 4 1/2 cups milk
- 6 tablespoons butter
- 5 tablespoons flour
- 1/8 teaspoon grated nutmeg
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- To finish:
- 1 pound rigatoni
- 3/4 cup freshly grated parmigiano-reggiano
- 1 tablespoon butter
- 1/4 cup milk
Chicken Piccata with Fried Capers

Rinse the capers and pat them dry with paper towels
- 2 Tbs. drained nonpareil capers
- 2 Tbs. olive oil
- 1 lb. thin chicken breast cutlets
- Kosher salt and freshly ground black pepper
- 1 clove garlic, finely chopped
- 1/2 cup homemade or low-salt canned chicken broth
- 2 Tbs. fresh lemon juice
- 1/2 tsp. honey
- 2 Tbs. cold unsalted butter, cut into 3 pieces
- 1 Tbs. chopped fresh flat-leaf parsley
Barley risotto with butternut squash and cranberries

Bring the water, celery, carrots, onion, bay leaves and olive oil to a boil
- 2 quarts water
- 1 cup diced (1/4-inch) trimmed carrots
- 1 cup diced (1/4-inch) onion
- 1 cup diced (1/4-inch) trimmed celery
- 1 teaspoon extra virgin olive oil
- 2 bay leaves
- 1 1/2 cup pearl barley
- 2 cups butternut squash, cut in 1/2 inch cubes
- 1 cup dried cranberries
- 6 tablespoons unsalted butter
- 1/2 cup Grana Padano
- Salt and freshly ground black pepper
Lemon chicken stew

In an 8-quart casserole stockpot, heat 2 tablespoons of the oil over medium high heat
- 5 T canola oil
- 1/2 C all-purpose flour
- Kosher salt
- Freshly ground pepper
- 1 ob skinless and boneless chicken thighs, cut into 1-inch pieces
- 4 carrots, sliced
- 2 ribs celery, chopped
- 1 onion, diced
- 1 leek, thinly sliced
- 2 cloves garlic, minced
- 5 C chicken stock
- 1 C water
- 3 T lemon juice
- 1 cup orzo pasta
- 2 tablespoons fresh tarragon, chopped
Whole Wheat Blueberry Banana Muffins

Preheat oven to 400° and grease a 12-cup muffin pan
- 1 1/2 C whole wheat pastry* flour
- 1 1/2 t baking powder
- 1/2 t table salt
- 1/4 t baking soda
- 2 t ground cinnamon
- 1 egg, beaten
- 1/2 C packed brown sugar
- 1/2 C vanilla greek yogurt
- 3 T olive oil
- 2 mashed ripe bananas
- 1 t vanilla extract
- 1/2 C frozen blueberries tossed in a few pinches of flour
- * pastry flour yields lighter results
Spinach Meatloaf

Preheat oven to 375°F. Mix all ingredients in large bowl
- 1 lb ground round/sirloin
- 1/2 lb ground turkey or pork
- 1/2 cup parmesan cheese
- 1/2 cup shredded swiss cheese
- 1 1/2 cups drained+chopped spinach
- 2 Tablespoons prepared mustard
- Salt, pepper, and garlic to taste
- 2 medium eggs
Magic Toffee Candy

Also called Saltine Cracker Toffee, Fool's Toffee, Toffee Brickle, Ghetto Toffee
- Saltine crackers
- 1 c (2 sticks) unsalted butter
- 1 c brown or white sugar
- pinch of salt
- 12 oz package chocolate chips
- Optional: chopped walnuts, pecans, or almonds
Thick, Chewy Oatmeal Raisin Cookies

Preheat oven to 350°F (175°C)
- 1/2 cup (1 stick or 4 ounces) butter, softened
- 2/3 cup light brown sugar, packed
- 1 egg
- 1/2 teaspoon vanilla extract
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt (I often use a half teaspoon, but I like more salt in my baked goods)
- 1 1/2 cups rolled oats
- 3/4 cup raisins
- 1/2 cup walnuts, chopped (optional)
