1) Preheat oven to 400 degrees
- 1 28 ounce can Italian tomatoes
- 1/4 cup grated onion
- 2 - 3 cloves garlic, grated or pasted
- 3 tablespoons EVOO
- a few leaves fresh basil, torn
- 1 teaspoon dried oregano or marjoram
- salt and pepper
- 1 pound ground beef, pork and veal mix
- 1 cup fresh ricotta
- 1/2 cup grated parmigiano-reggiano
- 2 tablespoons chopped flat-leaf parsley
- 1 loaf (12-14 inches) ciabatta, split lenghwise
- 2 - 2 1/2 cups shredded mozzarella or mild provolone

1)In a Dutch oven, cook the beef, onions and green peppers over medium heat until meat is no longer pink; drain
- 2 Lbs ground beef
- 2 large onions, chopped
- 2 large green peppers, chopped
- 2 cans (28 ounces each) diced tomatoes, undrained
- 2 cans (16 ounces each) hot chili beans, undrained
- 2 cans (15 ounces each) black beans, rinsed and drained
- 2 cans (11 ounces each) whole kernel corn, drained
- 2 cans (8 ounces each) tomato sauce
- 2 envelopes taco seasoning
- 2 packages (13 ounces each) spicy nacho tortilla chips
- 4 cups (16 ounces) shredded cheddar cheese

1) Spray 3 to 4 quart slow cooker with cooking spray
- 1 loaf (16 oz) Mexican prepared cheese product with jalapeno peppers, cut into cubes
- 3/4 cup Old El Paso Thick 'n Chunky salsa
- 1 can (15 oz) black beans, drained, rinsed
- 1 package (9 oz) frozen cooked chicken breast strips, thawed, cubed
- 1 container (8 oz) sour cream
- 1 medium red bell pepper, chopped
- 3 medium green onions, sliced
- Large tortilla chips

- 1 pound pizza dough
- 2 cups shredded italian cheese blend
- 1 cup vodka sauce
- 2 ounces pepperoni, sliced

Cocktails (Pineapple Mojitos)

In each of 8 highball glasses, crush together one-eighth of the mint leaves, 2 lime wedges and 1 tablespoon sugar
- 1 bunch fresh mint, stems discarded
- 2 limes, each cut into 8 wedges
- 1/2 cup sugar
- 1 cup pineapple juice
- 1 cup canned crushed pineapple
- 1 cup light rum
- 4 cups ice cubes
- 1 cup club soda
