Tuscan (lacinato) Kale and Ricotta Salata Salad

- 1 lb lacinato kale, or tender regular kale, stems and
- center rib discarded
- 6 T finely chopped shallots
- 6 T lemon juice
- 1/4 t salt
- 1/4 t freshly ground black pepper
- 6 T extra virgin olive oil
- 8 oz coarsely grated ricotta salata (1 cup)
Salted Fudge Brownies

1. Preheat oven to 350 degrees Farenheit
- 1 1/2 sticks unsalted butter
- 2 ounces unsweetened chocolate, finely
- chopped
- 1/4 cup, plus 2 tablespoons unsweetened
- cocoa
- 2 cups sugar
- 3 large eggs
- 1 1/2 teaspoons pure vanilla extract
- 1 cup all purpose flour
- 1/2 teaspon fleur de Sel, plus pinch
- for finishing
Salmon with Anchovey-Garlic Butter

- 4 anchovy filet, minced
- 1 fat garlic clove, minced
- 1/4 coarse Kosher salt

- 1/2 lemon

- 1 c sugar
- 1 c water
- 1 can mandarin oranges, drain well

1. Heat water to a boil in saucepan
- 1 c. water
- 1/2 tblsp. salt
- 1 head garlic, separated into cloves, minced
- 1 c. packed fresh flat-leaf parsley, minced
- 1 c. fresh oregano leaves, minced
- 2 tsp. crushed red pepper flakes
- 1/4 c. red wine vinegar
- 1/2 c. extra virgin olive oil
Herring Tidbits

- 16 oz jar herring tidbits in wine, throw out onions,
- drain
- 1 red onion, sliced paper thin
- 2 carrots, shredded
- 3 T sugar
- 5 squirts lemon juice
- 1 c sour cream
- 1/2 c mayonnaise
Hot Artichoke-Parmesan Dip

- 1 cup plus 1 tablespoon freshly grated parmesan cheese

- 3 cups flour
- 3 eggs
- 3 T of baking powder
- Vanilla
- 2 sticks margarine
- 1 cup sugar
- Jelly roll pan
- Wax or parchment paper
- FILLING
- 8-10 Macintosh apples, peeled cored and finely grated

Savory Stuffed Sole

- 1/4 c white wine
- 1/2 c heavy cream
