Crispy Zucchini Fritters

When you make the batter, just make sure the beer is very cold so it fries up crisp
- 1/2 cup all purpose flour
- 20 grams Comté or Gruyère cheese, finely grated
- 1/4 teaspoon kosher salt
- black pepper
- 1 large egg
- 1/2 cup of cold beer
- 2 medium zucchinis shredded with a box grater (about 1 cup packed)
- 1/2 small red onion shredded
Summer Squash with Olives and Sundried Tomatoes

Saute shallots in olive oil with salt and pepper until softened, add zucchini, summer squash and red bell pepper
- Dressing:
- 2 zucchini
- 1 or 2 yellow squash
- Red bell pepper
- shallots (sliced)

Zucchini Rice Gratin

Preheat oven to 450°F. Cook the rice according to your favorite method
- 1/3 cup uncooked white rice, long-grain is suggested but use whatever you prefer
- 5 tablespoons olive oil
- 1 1/2 pounds zucchini (about 3 medium), sliced 1/4-inch thick
- 1/2 pound plum tomatoes, sliced 1/4-inch thick
- Table salt and freshly ground black pepper
- 1 medium onion, halved lengthwise and thinly sliced
- 3 garlic cloves, minced
- 2 large eggs, lightly beaten
- 1 teaspoon chopped fresh thyme leaves
- 1/2 cup grated Parmesan, divided
