Using a strainer, rinse the mini marshmallows over cold running water
- 4 ounces marshmallows (about 2 cups of mini marshmallows or 16 large marshmallows)
- 1/4 cup whole milk
- 6 tablespoons Nutella chocolate-hazelnut spread
- 1 cup heavy whipping cream
Snickerdoodle Cupcakes

To make the cupcakes, preheat the oven to 350° F
- For the cupcakes:
- 1 ½ cups all-purpose flour
- 1 ½ cups cake flour, sifted
- 1 tbsp. baking powder
- 1 tsp. salt
- 1 tbsp. ground cinnamon
- 2 sticks (1 cup) unsalted butter, at room temperature
- 1 ¾ cups sugar
- 4 large eggs
- 2 tsp. vanilla extract

- For the frosting:

- 1 tbsp. light corn syrup
- 3 large egg whites, at room temperature
- For garnish:
- 1 tsp. ground cinnamon

Apple Cupcakes with Cream Cheese Frosting and Coconut

Preheat the oven to 375°F
- 3/4 stick (6 tablespoons, 3 ounces) softened unsalted butter
- 1 cup (7 1/2 ounces) brown sugar, light or dark
- 2 large eggs
- 1 1/2 cups (6 3/8 ounces) King Arthur Unbleached All-Purpose Flour
- 1 teaspoon ground cinnamon (if you're using plain applesauce) OR 1/2 teaspoon cinnamon (if you're using cinnamon-flavored applesauce)
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon baking soda

Maple Bacon Kettle Popcorn

1. Fry the bacon in a skillet until brown and crisp
- 4 slices bacon, cooked and grease reserved
- 1 tablespoon maple syrup
- ½ cup corn kernels for popping
- ¼ cup cooking oil (use the reserved bacon grease and add extra vegetable/canola/olive oil to make ¼ cup)
- 3 tablespoons granulated sugar
- 1½ teaspoon salt
Pumpkin Pecan Dessert (In A Jar)

- 1 can (15oz) pumpkin
- 1 can (12 oz) evaporated milk
- 3 eggs
- 3/4 cup sugar
- 4 teaspoons pumpkin pie spice

Cinnamon Swirl Raisin Bread

Begin by putting the scalded milk, water, and honey in a very large bowl

- 1 ½ c. milk, scalded & cooled to lukewarm
- 1 c. lukewarm water
- ½ c. honey
- 1 Tbs. + 1 tsp. yeast
- 3 eggs, at room temperature
- 4 oz. unsalted butter, at room temperature
- 4 c. whole wheat flour + extra for bench
- 4 c. unbleached ap flour
- 1 tsp. sea salt
- 1 c. raisins, plumped in hot water & drained
- cinnamon swirl
- 1 Tbs. milk, lukewarm
- 1 c. brown sugar, not packed
- 2 Tbs. ground cinnamon
- ~2 Tbs. melted butter (optional)
Nutella Coffee Frosting

In a small bowl, combine 1 tablespoon milk with 1 teaspoon instant coffee and stir until coffee is dissolved
- # 2 tablespoons butter, softened
- # 2 tablespoons Nutella
- # 1 1/2 cups powdered sugar
- # 1-2 tablespoons milk
- # 1 teaspoon instant coffee
- # 1/2 teaspoon vanilla
Pumpkin Seed Brittle

- 1 teaspoon vegetable oil, plus additional for coating
- 7 ounces hulled pumpkin seeds (these are the green ones)
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon kosher salt
- 1 pound 6 ounces granulated sugar
- 12 ounces water
