Banana Roll with Blueberry Lemon Cream Cheese Filling

1) Preheat oven to 375 degrees
- Cake ingredients:
- 3 eggs
- 1 cup sugar
- 3/4 cup mashed ripe banana
- 1 tsp lemon juice
- 3/4 cup AP flour
- 1 tsp baking powder
- 1/2 tsp salt
- Filling ingredients:
- 8 oz cream cheese (softened)
- 1 cup confectioners' sugar
- 1/4 cup butter (softened)
- 1 tsp lemon zest
- Juice of 1/2 a lemon
- 1 cup blueberries
Cookie Monster Cupcakes

-Preheat an oven to 350 degrees
- For cupcakes:
- 2 1/3 c. all-purpose flour
- 1 c. unsweetened cocoa powder, sifted
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 12 Tbsp (1 1/2 sticks) unsalted butter, at room temperature
- 2 c. firmly packed light brown sugar
- 2 tsp vanilla extract
- 4 eggs, at room temperature
- 1 1/2 c. buttermilk, at room temperature
- 24 oreos, one side twisted off and reserved for frosting
- For filling:
- 2/3 c. whipping cream
- 1 Tbsp powdered sugar (I just pulsed some granulated sugar in a mini food processor)
- 1/8 tsp vanilla extract
- 1/4 c. oreo cookie crumbs, made from reserved oreo sides
- For decoration:
- 1 recipe buttercream, tinted blue
- 1 small container of blue sugar sprinkles, place in a small bowl for dipping
- white candy melts
- oreos, halved with sharp knife
Blizzard Bars

Position an oven rack to the center of the oven and preheat it to 350 degrees
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, at room temperature
- 3/4 cup light brown sugar
- 1 teaspoon pure vanilla extract
- 1 large egg
- 1/3 cup plain malted milk powder
- 2 cups chopped candy bits (I used Snickers, Butterfinger, Heath bar, M&Ms, and white chocolate--see note)
Scallops with Mango and Avocado

In a medium pot, bring 2 cups canola oil to 350 degrees F
- * 2 cups canola oil, plus 3 tablespoons divided
- * 10 wonton wrappers
- * Salt, as needed
- * 1/2 pound (U20) sea scallops, patted dry
- * Freshly cracked black pepper, as needed
- * 1/2 mango, small diced
- * 1/2 avocado, small diced
- * 2 tablespoons coconut milk
- * 1/2 teaspoon hot sauce (recommended: Sriracha)
- * 1/2 lime, juiced
Cinnamon Raisin Bagels

1. To make the sponge, stir the yeast into the flour in a 4-quart mixing bowl
- Sponge:
- 1 teaspoon (0.11 ounces) instant yeast
- 4 cups (18 ounces) unbleached high-gluten or bread flour
- 2 1/2 cups (20 ounces) water, at room temperature
- Dough:
- 1 teaspoon (0.11 ounces) instant yeast
- 3 3/4 cups (17 ounces) unbleached high-gluten or bread flour
- 2 3/4 teaspoons salt
- 1 tablespoon ground cinnamon
- 5 tablespoons granulated sugar
- 2 cups loosely packed raisins, rinsed in warm water
- 2 teaspoons malt powder
- OR-
- 1 tablespoon dark or light malt syrup, honey, or brown sugar
- To Finish:
- 1 tablespoon baking soda
- Cornmeal or semolina flour for dusting
White Almond Sour Cream Cake (Emily)

Beat on low for 2 minutes bake in greased and floured pans for about one hour at 325 degrees
- Add the following to the bowl:
- 2 boxes white cake mix
- 2 C flour
- 2 C sugar
- 1 1/2 t salt
- whisk the above together in mixing bowl
- 8 egg whites
- 2 2/3 C water
- 4 T oil
- 2 C sour cream
- 2 t vanilla
- 2 t almond
Sweet Potato Pound Cake

Cream shortening and oleo; add sugar; beat well
- 1 c. shortening
- 1/2 c. melted oleo
- 3 1/2 c. all purpose flour
- 1 tsp. baking powder
- 1 tsp. cinnamon
- 2 1/2 c. chopped pecans
- 1 1/2 c. mashed sweet potatoes (No. 2 can)
- 1/2 tsp. almond extract
- 6 eggs
- 1 tsp. salt
- 1 tsp. soda
- 1 tsp. allspice
- 1 1/4 c. buttermilk

Preheat the oven to 375. Line 2 baking sheets with parchment paper
- * 12 ounces blueberries (about 2 cups)
- * 1-2 teaspoons freshly squeezed lemon juice
- * 1/2 teaspoon lemon zest
- * 1/2 cup plus 2 Tablespoons granulated sugar
- * 2 cups all-purpose flour
- * 2 teaspoons baking powder
- * 1/2 teaspoon kosher salt
- * 1 teaspoon dried lavender, divided
- * 3 ounces (6 Tablespoons) cold, unsalted butter, cut into small pieces
- * 2/3 cup heavy cream, plus more as needed
- * coarse sugar, for sprinkling
Smoky Spicy Brisket

In a slow cooker, combine the garlic, onions, chilies, adobo sauce, honey, Worcestershire, mustard and beer
- 6 garlic cloves, minced
- 2 yellow onions, chopped
- 6 canned chipotle chilies in adobo sauce, drained and chopped, plus 1⁄4 cup sauce
- 1 ⁄4 cup honey
- 1 Tbs. Worcestershire sauce
- 2 tsp. brown mustard
- 1 1⁄2 cups lager or other light beer
- 1 flat-end beef brisket, 3 to 4 lb., fat trimmed to 1⁄4 inch
- Salt, to taste
Mushroom & Spinache Quiche

1. Pre-bake the pie shell and cool
- 1 Pie Shell
- 1 box Spinach, thawed and liquid squeezed out
- 4 oz can sliced Mushrooms
- 1/2 white Onion, chopped
- 2 T Vegetable Oil
- 3 Eggs
- 1 cup Heavy Cream
- 1 cup grated Asiago or Parmesan Cheese
- Salt and Pepper to taste
- 1 tsp Garlic Powder
