Peach Cupcakes with Peach Cream Cheese Frosting

Preheat oven to 350 degrees
- 1 cup (2 sticks) unsalted butter, softened
- 2 2/3 cups all-purpose flour
- 2 1/2 teaspoons baking powder

Classic Barbecue Sauce

In a large stockpot or Dutch oven, heat the oil over medium-high heat
- 1/3 cup vegetable or canola oil
- 3 cups yellow onion, chopped
- 6 cloves garlic, minced
- 4 tsp. kosher salt, divided
- 1 tsp. chili powder
- ¼ tsp. ground coriander
- ¼ tsp. ground cumin
- 2-3 tbsp. honey
- 1/3 cup unsulfured molasses

- 2 (28 oz.) cans diced tomatoes (fire-roasted, if available)
- ¾ cup cider vinegar
- ¼ cup white vinegar
- 2 tbsp. Worcestershire sauce
- 2-3 tsp. black pepper
- ½-2 cups water
Maple Glazed Butternut Squash

- 1 medium butternut squash, peeled seeded quartered and cut into half-inch slices
- 1/4 cup maple syrup
- 1/4 teaspoon ground mace

Strawberry Margarita Cupcakes

To make the cupcakes: preheat the oven to 325˚ F
- Cake:
- 3 cups all-purpose flour
- 1 tbsp. baking powder
- 1/2 tsp. salt
- 1 cup (2 sticks) unsalted butter, at room temperature
- 2 cups sugar
- 4 large eggs, at room temperature
- 3 limes, zested and juiced
- 1/2 tsp. vanilla extract
- 1 cup buttermilk
- Strawberry Tequila Puree:
- 1- 8 oz container of strawberries
- Juice and zest of 1 lime
- 1/2 cup of tequila
- 2 tablespoons of sugar
- Frosting:
- 1 cup organic non-hydrogenated shortening
- 2 sticks un-salted butter slightly chilled
- 4 cups powdered sugar
- 1/3 cup strawberry tequila puree
Smoky Yam Gratin
