Praline Syrup

Combine syrup, sugar and water in a saucepan over medium heat
- 2 cups dark corn syrup
- 1/3 cup dark brown sugar
- 1/2 cup water
- 1 cup pecan pieces
- 1/2 tsp vanilla
New York Style Crumb Cake

1.Preheat the oven to 350 degrees F and position the rack in the center position
- For the crumb topping:
- 1 cup firmly packed dark brown sugar
- 1/2 cup granulated sugar
- 1/2 teaspoon salt
- 1 1/2 tablespoons cinnamon
- 1 cup (2 sticks) unsalted butter, melted
- 2 1/2 cups all purpose flour
- For the cake:
- 2 1/2 cups all-purpose flour
- 3/4 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 12 tablespoons (1 1/2 sticks) unsalted butter
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 1/4 cups sour cream
- 1 teaspoon vanilla extract

1. To make the sponge, stir the yeast into the flour in a 4-quart mixing bowl
- For the Sponge:
- Active Prep Time: 45 minutes | Inactive Prep Time: 10 hours | Boil/Bake Time: 20 minutes
- 1 teaspoon instant yeast
- 4 cups (18 ounces) high-gluten or bread flour
- 2 1/2 cups water, at room temperature
- For the Dough:
- 1 teaspoon instant yeast
- 3 3/4 cups (17 ounces) high-gluten or bread flour
- 2 3/4 teaspoons salt
- 2 teaspoons malt powder or 1 tablespoon dark or light malt syrup, honey or brown sugar
- 1 1/2 cups dried blueberries, rinsed
- To Finish:
- 1 tablespoon baking soda
- Cornmeal or semolina flour for dusting
Southwestern Crab Cakes

Cook corn in a cast iron pan, over high heat and with very little vegetable or corn oil until blackened
- # 1/4 cup fresh corn kernels
- # Vegetable or corn oil
- # 1 small poblano pepper
- # 1/4 cup diced onion
- # 1/4 cup diced celery
- # 2 eggs, beaten
- # 1 tbsp. chopped basil
- # Salt & pepper (approximately 1/2 to 1 teaspoon each)
- # Corn chips, crushed (enough to bind mixture)
- # 1 lb. lump crab meat
- # 1 lb. knuckle crab meat

- 2 pasilla chiles, stemmed & seeded

- 8 cloves garlic, minced
- 1/2 tsp. ground ginger

- 1/4 tsp. cayenne
- 2 Tbs. lime juice
- 1 c. + 2 Tbs. shrimp stock (or chicken stock or water)
- 1 Tbs. olive oil
- 4 Tbs. butter
- salt
- freshly ground black pepper

In a medium skillet set over medium-high heat, melt the butter until frothy
- 2 Tablespoons unsalted butter
- 1/4 cup packed brown sugar
- 2 ripe bananas, sliced in half crosswise and lengthwise
- 2 Tablespoons dark rum
- 2 large egg yolks
- 1/3 cup sugar
- 1 1/2 cups whole milk
- 2 cups heavy cream
- 8 2-inch vanilla wafers, roughly chopped, plus more for garnish

Place all the ingredients into a slow cooker set on low
- 4 lbs apples (I used a myriad of types: Empire, Jonagold, and Fuji)
- 2 lbs pears (Again, I used a myriad: Bartlett, Bosc and Anjou)
- 2 c. granulated sugar
- 2 c. sweet apple cider
- 1 tbsp cinnamon
- 1/2 tsp cloves
- 1/2 tsp ginger
- 1/4 tsp cardamom

1. Preheat oven to 375° (convection not recommended)
- 2 dark orange-fleshed sweet potatoes (1 1/4 to 1 1/2 lb. total), such as jewel or red garnet (sometimes sold as yams)
- 1 tablespoon melted butter
- Pecan Crust (recipe follows)
- 2 teaspoons lemon juice
- 3 packages (8 oz. each) cream cheese, regular or light (neufchâtel), at room temperature
- 3/4 cup granulated sugar
- 1/2 cup firmly packed light brown sugar
- 4 large eggs
- 1/4 cup whipping cream
- 1/4 cup sour cream
- 1/4 cup maple syrup
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- Maple Cream (recipe follows)
Chipotle Chile Dressing

1. Puree first 6 ingredients in blender
- 1/2 cup plus 2 tablespoons fresh lemon juice
- 6 tablespoons mayonnaise
- 1/4 cup honey
- 10 garlic cloves
- 4 teaspoons minced canned chipotle chilies*
- 1 tablespoon chili powder
- Salt and pepper to taste
