Combine the powdered sugar and salt and spread out on the counter to make a 12-inch circle
- 4 cups powdered sugar, plus more if needed
- Dash salt
- Couple spoonfuls shortening
- 1 (16-ounce) bag marshmallows
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon butter extract
- 1/2 teaspoon almond extract
- Gel coloring (or 1/2 tablespoon water if not using gel colors)
Mini Pear and Ginger Cheesecakes with Walnut Shortbread Crust

Have all cheesecake ingredients at room temperature
- 1/2 cup flour
- 1/4 cup walnuts
- 1 tablespoon + 1/3 cup sugar
- 1/8 teaspoon kosher salt, plus a pinch
- 3 tablespoons unsalted butter, melted
- 12 ounces cream cheese, at room temperature
- 1 egg, lightly beaten
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cinnamon

- 2 tablespoons butter
- 1/3 cup light brown sugar, firmly packed
- 1 medium (8 ounces) pear peeled, cored and cut into 1/4" dice

- 1/3 cup sweet white wine, such as a late harvest Riesling or Gewürztraminer
- 2 tablespoons diced candied ginger

Homemade Turkey Breakfast Sausage

Add 1 teaspoon of the oil to a 12-inch nonstick skillet and set over medium heat
- 1 tablespoon canola oil
- 1 lb ground turkey
- 2 teaspoons minced fresh sage (or 1/2 teaspoon dried)
- 1 1/2 slices sandwich bread, crusts removed and torn into small pieces
- 1/4 cup buttermilk

- 4 Tbs. (1/2 stick) unsalted butter
- 1 1/2 cups finely diced leeks
- 2 Tbs. cognac or brandy
- Meat from tails and claws of 2 cooked lobsters, tail meat halved, cut into 1/2-inch pieces
- 1 Tbs. olive oil
- 1/2 cup finely diced fennel
- 2 garlic cloves, minced
- 2 cups Arborio rice
- 1/4 tsp. lemon zest
- 1/2 cup white wine
- 8 cups lobster stock, warmed
- 2 Tbs. chopped fresh chervil, plus chervil sprigs
- for garnish
- Salt, to taste
