In a large stock pot over high heat add 2 tablespoons oil
- 4 * 4 tablespoons canola oil, divided
- 6 * 6 skinless chicken thighs
- 2 * 2 ham hocks

- 1 * 1 cup carrots, roughly chopped
- 3 * 3 tablespoons garlic, minced
- 1 * 1 cup white wine
- * Seafood stock, about 2 cups
- 1 * 1 tablespoon saffron dissolved in 1 cup warm water for 3 minutes
- 1 * 1 pound Mexican style chorizo
- 1 * 1 cup red bell peppers, diced
- 3 * 3 cups Arborio rice
- 2 * 2 tablespoons salt
- 2 * 2 tablespoons freshly ground black pepper
- 6 * 6 scallops
- 6 * 6 mussels

- 1 medium Onion, chopped
- 8 oz Velveeta Cheese, cubed
- 8 oz shredded Monterrey Jack Cheese
- 15oz can of Stewed Tomatoes
- 10-12oz can of Cream of Mushroom Soup
- 1 pinch dried Sweet Basil
- 1 pinch Chili Powder
- 1 pinch Cumin
- 1 pinch granulated Garlic
- 1 Jalapeno, minced...I use 4 in mine.
Mustard and Whiskey Dipping Sauce

- 1 cup course ground Mustard
- 1/3 cup Whiskey (I use Jack Daniel's Tennessee Whiskey)
- 1/4 cup Honey
- 2 T Hot Sauce
- 1 dash ground Pepper

- * 1 Cup buttermilk
- * 1 Tablespoon lemon juice
- * 1 Tablespoon vanilla
- * Cinnamon for sprinkling over the top, if desired
