Root Beer Float Bundt Cake

Position an oven rack to the lower third of the oven and preheat it to 325 degrees
- For the cake:
- 2 cups root beer
- 1 cup dark unsweetened cocoa powder (I like Valrhona)
- 1/2 cup unsalted butter, cut into pieces
- 1 1/4 cups granulated sugar
- 1/2 cup firmly packed dark brown sugar
- 2 cups all-purpose flour
- 1 1/4 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- For the glaze:
- 2 cups confectioners' sugar
- 1/3 cup dark unsweetened cocoa powder
- 1/4 teaspoon salt
- 1 teaspoon pure vanilla extract
- 1/4 cup root beer
- 3 tablespoons unsalted butter, very soft
Chipotle Appetizer Meatballs

To make the sauce, sauté the onion and garlic in the oil until they are lightly browned
- Sauce:
- 1 medium onion, chopped
- 4 garlic cloves, chopped
- 1 tablespoon vegetable oil
- 1 cup tomato sauce
- 2 cups beef broth
- 1/4 cup chipotles en adobo along with the sauce, stems removed
- Meatballs:
- 1 pound ground beef
- 1 pound ground pork
- ½ cup finely chopped onion
- 1/4 cup finely chopped fresh cilantro
- ½ cup bread crumbs
- 1 egg, beaten
- Salt and freshly ground black pepper
- Vegetable oil for frying
- Garnish: Chopped fresh cilantro

1. For custard: In a large saucepan, combine 3 cups of the milk, the sugar, and egg yolks
- 6 cups milk
- 1-1/3 cups sugar
- 12 egg yolks, beaten
- 6 ounces bittersweet chocolate, chopped and melted
- 6 ounces dark chocolate, chopped
- 3 ounces white baking chocolate, chopped (optional)

- 1/2 cup butter
- 4 egg whites
- 2 cups all-purpose flour
- 1 teaspoon baking powder

- 3 tablespoons Irish cream liqueur
- 1 teaspoon vanilla

- 8 tablespoons room temperature butter, cut into tablespoon-size pieces
- 1/4 teaspoon cinnamon
- 8 tablespoons granulated sugar, divided use
- 7 tablespoons creamy peanut butter
- 1/2 cup butterscotch flavored chips
- 2/3 cup egg substitute or lightly beaten shelled eggs
- 1/3 cup lightly spooned cake or all-purpose flour
- 1 tablespoon confectioners’ sugar
