Chicken Corn Chowder with Sweet Potatoes

Mix milk and muffin mix in bowl until well combined
- 3 cups 2% milk
- 1 (8.5 oz) box Jiffy corn muffin mix
- 2 T. butter
- 1 onion, chopped fine
- 3 garlic cloves, minced
- 1/2 tsp. ground cumin
- 1/2 tsp. dried oregano
- 2 quarts chicken broth
- 2 small chicken breasts, cut into 1/2 " cubes
- 2 large sweet potatoes or yams, peeled and cut into 1/2" pieces
- 1 cup shredded Monterey Jack Cheese
- 3 cups frozen corn (not thawed)
- 1/2 cup chopped fresh parsley (or 2 Tb dried parsley)
- salt and pepper, to taste
Clover Leaf Petit Fours

1. Preheat oven to 350’F

- 1 cup (2 sticks) unsalted butter
- 6 ounces semi-sweet chocolate (3 bakers squares)
- 1 1/3 cup cake flour (not self-rising)

- 1/4 cup light corn syrup (prevents crystallization)
- 1 tsp vanilla extract
- 6 fl.oz Bailey’s Irish Cream (~ 3/4 cup) – Grand Marnier also gives a nice flavor, but alcohol can be substituted with water

1. Make topping: In a bowl, stir together flour, brown sugar, salt and cinnamon

- 4 (4-ounce) boneless center-cut loin pork chops (about 1/2 inch thick)

- 1-1/2 teaspoons active dry yeast
- 1 teaspoon granulated sugar
- 1/4 cup lukewarm water
- 3 cups all-purpose flour
- 3-1/2 tablespoons unsalted butter
- 2 tablespoons light brown sugar
- 1/4 teaspoon salt
- 1 cup pureed pumpkin
- 1 egg, lightly beaten
- 1/4 cup maple syrup
- 1/4 teaspoon ground cinnamon

Beef Jerky (Homemade)

1. Slice the partially frozen beef into long strips about 1/8 of an inch thick
- 2 pounds of boneless beef top round, fat trimmed, partially frozen
- 1 cup of Worcestershire sauce (I used Whole Foods brand because other brands have high-fructose corn syrup in the ingredients)
- 1/2 cup of water
- 4 garlic cloves minced
- 4 teaspoons of chile powder
- 2 teaspoons of chipotle powder
- 2 teaspoons of black pepper
- 1 teaspoon of salt
- 1 teaspoon of cayenne
