Fried Chicken Bites

1. Combine first 7 ingredients in a small bowl; reserve half of spice mixture
- 1 1/2 teaspoons to 1 Tbsp. ground red pepper
- 1 1/2 teaspoons ground chipotle chile pepper
- 1 1/2 teaspoons garlic powder
- 1 1/2 teaspoons dried crushed red pepper
- 1 1/2 teaspoons ground black pepper
- 3/4 teaspoon salt
- 1/2 teaspoon paprika
- 2 pounds skinned and boned chicken breasts, cubed
- 2 cups buttermilk
- 3 bread slices, toasted
- 1 cup all-purpose flour
- Peanut oil
- Blue cheese dressing or honey mustard dressing
Drunken Charro Beans (Crockpot)

Rinse the dried beans in a colander
- 1 32oz pkg of dried pinto beans
- 1 lg onion, chopped
- 3 jalapenos, seeded & diced
- 1 Can of Rotel (you can use whatever level, but we used the Hot)
- 1lb pkg of bacon
- 2 C chicken stock
- 1 Tbsp each...garlic salt, jalapeno salt, pepper
- 2 bottles of Corona
Carrot Cake with Cream Cheese Frosting Trifle

1. Position the racks in the oven into thirds and preheat the oven to 325 degrees F
- For the Cake:
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 1 teaspoon ground cloves
- 1 teaspoon ground nutmeg
- 1 teaspoon ground allspice
- ¾ teaspoon salt
- 3 cups grated carrots
- 1 cup coarsely chopped walnuts
- 1 cup shredded coconut (sweetened or unsweetened)
- ½ cup raisins
- 2 cups granulated sugar
- 1 cup canola oil
- 4 eggs
- For the Frosting:
- 8 ounces cream cheese, at room temperature
- 4 ounces (½ cup) unsalted butter, at room temperature
- 1 pound (3¾ cups) powdered sugar
- 1 tablespoon vanilla extract
Cappuccino Cake

1.Preheat oven to 350. 2
- Cake
- 2 heaping Tablespoons dark cocoa powder, plus more for dusting pans
- 1 Box any flavor of chocolate cake mix (I use Duncan Hines)
- 1 Cup sour cream
- 1/2 Cup milk
- 1/4 Cup oil
- 3 eggs
- 1-2 teaspoons Vanilla
- Cappuccino Icing
- 1 teaspoon vanilla
- 5 cups confectioner's sugar
- Enough instant coffee granules to make three 6 oz cups of coffee (Read instructions on instant coffee to see how much they say to add for each cup. This will seem like a lot but it isn't)
- 1/2 cup milk
- 2 sticks butter, softened on the counter at room temperature (not in microwave)
Pina Colada Sorbet

Place the pineapple chunks in the bowl of a food processor fitted with a chopping blade
- 2 1/2 cups frozen pineapple chunks
- 1/4 cup + 1 tablespoon light coconut milk
- 1/2 tablespoon coconut rum
- 2 teaspoons light agave nectar
- 1 mini pineapple, cut in half and scooped out to make 2 "bowls" (optional)
Pumpkin Cupcakes with Cream Cheese Frosting

To Make the Cupcakes: 1. Preheat oven to 350°F
- For the Cupcakes:
- 4 cups cake flour (not self-rising), sifted
- 1 teaspoon baking soda
- 1 Tablespoon + 1 teaspoon baking powder
- 1 teaspoon salt
- 2 teaspoons ground cinnamon
- 1 Tablespoon ground ginger
- 1 teaspoon freshly grated nutmeg
- ¼ teaspoon ground cloves
- 1 cup (2 sticks) unsalted butter, room temperature
- 2 ½ cups packed light-brown sugar
- 4 large eggs
- 1 cup buttermilk
- 1 ½ cups canned pumpkin (not pie filling)
- For the Cream Cheese Frosting:
- 1 cup (2 sticks) unsalted butter, room temperature
- 12 ounces cream cheese, room temperature
- 1 pound (4 cups) confectioners’ sugar, sifted
- ¾ teaspoon vanilla extract

In large stock pot over high heat, add butter and bacon grease
- 2 * 2 tablespoons butter
- 3 * 3 tablespoons bacon grease, or canola oil
- 2 * 2 red bell peppers, diced (about 2 cups)
- 2 * 2 jalapenos, minced (about 2 tablespoons)
- 3 * 3 Anaheim chiles, roasted, peeled, chopped
- 3 * 3 poblano chiles, roasted, peeled, chopped
- 2 * 2 yellow onions, diced (about 2 cups)
- 1 * 1 head garlic, minced (about 1/4 cup)
- 1 * 1 pound boneless chuck, trimmed and cut into 1/4-inch cubes
- 2 * 2 pounds ground beef, coarse grind
- 1 * 1 pound bulk Italian sausage
- 2 * 2 teaspoons granulated onion
- 2 * 2 teaspoons granulated garlic
- 3 * 3 tablespoons chili powder
- 2 * 2 teaspoons hot paprika
- 2 * 2 teaspoons ground cumin
- 2 * 2 teaspoons ground coriander
- 2 * 2 teaspoons cayenne pepper
- 2 * 2 teaspoons kosher salt
- 2 * 2 teaspoons freshly ground black pepper
- 2 * 2 cups tomato sauce
- 1 * 1 cup tomato paste
- 12 * 12 ounces lager beer
- 1 * 1 cup chicken stock
- 2 * 2 (15.5-ounce) cans pinto beans, with juice
- 2 * 2 (15.5-ounce) cans kidney beans, with juice
- * Double-Fried French Fries, recipe follows

Coconut Coffee Rum Cupcakes

Preheat the oven to 350 degrees and line your tins, and put the apple cider vinegar in the coconut milk
- 1 cup coconut milk
- 1 tsp apple cider vinegar
- 1 1/4 cup all-purpose flour
- 2 tablespoons corn starch
- 3/4 teaspoons baking powder
- 1/2 teaspoons baking soda
- 1/4 teaspoons salt
- 1/2 cup margarine or butter, softened
- 3/4 cup granulated sugar
- 2 teaspoons vanilla extract
- 1 teaspoon coffee extract (other things that might work: Starbucks Via powder combined with a tablespoon of hot water, other instant coffee combined with a tablespoon of hot water, concentrated espresso. Straight-up coffee won’t do.)
- 1 teaspoon coconut extract (not 100% necessary, but important for flavor)
- 2 tablespoons of dark rum
Butternut Squash, Rosemary and Blue Cheese Risotto

Bring 7 cups broth to boil in large saucepan
- 7 cups (or more) low-salt chicken broth
- 3 tablespoons butter
- 1 1/4 cups finely chopped onion
- 1 2-pound butternut squash, peeled, halved, seeded, cut into 1/2- to 3/4-inch dice (about 3 cups)
- 2 teaspoons chopped fresh rosemary, divided
- 2 cups arborio rice (about 13 1/2 ounces)
- 1/2 cup dry white wine
- 4 cups (packed) baby spinach leaves (about 4 ounces)
- 1/2 cup whipping cream
- 1/2 cup freshly grated Parmesan cheese
- 1/3 cup crumbled blue cheese (about 1 1/2 ounces)
Red Devil Cranberries

In a large saucepan, add the oil and saute the shallot and serrano pepper over medium-high heat for 3 to 4 minutes
- 2 * 2 teaspoons canola oil
- 1/4 * 1/4 cup minced shallot
- 1 * 1 teaspoon minced serrano pepper
- 1 * 1 cup blood orange juice, fresh if possible
- 1/2 * 1/2 cup agave syrup, preferably amber
- 1 * 1 (12-ounce) package fresh cranberries
- 1 * 1 tablespoon minced chipotle pepper
- 1 * 1 teaspoon adobo sauce
- 1 * 1 teaspoon ground cinnamon
- 1/2 * 1/2 teaspoon salt
