Spray a large nonstick saucepan with nonstick spray and set over medium-high heat
- 3 strips center-cut reduced-fat bacon, chopped
- 1 onion, diced
- 1 jalapeno, seeded and diced
- 1/4 cup all-purpose flour
- 1 (32-ounce) container chicken stock
- 2 russet potatoes, cubed
- 1/2 teaspoon salt
- 1 (16-ounce) package frozen baby gold and white corn kernels (3 cups)
- 1 cup fat-free milk
- 3 tablespoons fat-free half-and-half
- 1/2 cup reduced-fat shredded Cheddar cheese
- 2 tablespoons chopped fresh cilantro
Pumpkin Lasagne

Preheat the oven to 350 degrees
- * 1 cup pumpkin puree
- * 1 1/2 tablespoons extra-virgin olive oil
- * 1 medium onion, chopped
- * 4 to 6 cloves garlic, sliced
- * 1 pound spicy Italian sausage, casings removed
- * 1/2 cup red wine
- * 1 28-ounce can tomato sauce
- * 1/4 cup chopped fresh basil
- * 1/4 cup chopped fresh parsley
- * 1/2 teaspoon dried oregano
- * Kosher salt and freshly ground pepper
- * 1 16-ounce box lasagna noodles
- * 1 large egg
- * 2 1/2 cups ricotta cheese
- * 2 cups shredded mozzarella cheese
- * 1/2 cup shredded romano cheese
- * 1 large zucchini, very thinly sliced
Pumpkin Pie Parfaits

Put 7 cookies in a resealable plastic bag and crush into crumbs with a heavy pan
- * 13 gingersnaps, chocolate wafers or graham crackers
- * 1 tablespoon unsalted butter, melted
- * 3/4 cup plus 1 tablespoon confectioners' sugar
- * 1/2 cup canned pure pumpkin
- * 2 1/2 teaspoons bourbon
- * Pinch of freshly grated nutmeg
- * 1/2 cup white chocolate chips
- * 2 cups cold heavy cream
Pumpkin Caramel Cheesecake Turtle Bread

Preheat oven to 325F. Lightly grease and flour three mini loaf pans (3 ½ -x- 5 inch) or two standard loaf pans
- Pumpkin Bread:
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- 1 teaspoon cinnamon
- pinch of salt
- 1 cup pumpkin puree (plain, not the already made pumpkin pie kind)
- 1 teaspoon vanilla extract
- ½ cup canola oil
- 2 large eggs
- ¾ cup granulated sugar
- ¾ cup light brown sugar, loosely packed
- Caramel Cheesecake Filling:
- 8 ounces cream cheese, at room temperature
- ¼ cup brown sugar, tightly packed
- 2 tablespons Lyle’s Golden Syrup
- 2 tablespoons Caramel Sauce (store bought or homemade)
- 1 large egg
- Topping:
- Chocolate Glaze (recipe follows)
- Caramel Sauce (store bought or homemade) (my favorite homemade version can be found in this post)
- 1 cup pecans, roughly chopped
Espresso Spiced Pumpkin Muffins

Preheat oven to 375F. Line a 12-cup muffin tin with paper liners or lightly grease and flour
- 1 1/2 cups all purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 6 tbsp butter
- 1 tbsp instant espresso powder
- 1 1/2 tsp ground cinnamon
- 1/2 tsp ground cloves
- 1/4 tsp freshly ground nutmeg
- 1 1/4 cup brown sugar
- 2 large eggs
- 1 cup pumpkin puree
- 1 tsp vanilla extract
- 1/4 cup milk (any kind)
- Cinnamon Espresso Sugar Mixture, for topping (below)
Blackened Chicken with Creamy Peach Polenta

Tomato Salsa: In a small bowl, combine tomatoes, olive oil, vinegar and OLD BAY
- Tomato Salsa:
- 1 cup plum tomatoes, seeded and diced
- 1 tablespoon extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 1/2 teaspoon OLD BAY® Seasoning
- Blackened Chicken:
- 1 1/2 pounds boneless skinless chicken breast halves
- 2 tablespoons OLD BAY® Blackened Seasoning
- 1/4 teaspoon McCormick® Ground Red Pepper (optional)
- 2 tablespoons unsalted butter
- Creamy Peach Polenta:
- 1 1/2 cups chicken broth
- 1 cup heavy cream
- 1 ripe peach, peeled and chopped (3/4 cup)
- 1 cup instant polenta
Fresh Strawberry Syrup

Slice the strawberries. Mash the berries in a shallow pan, using a potato masher or fork
- 3 quarts fresh strawberries, washed and capped
- 1/2 cup sugar
- 1/4 cup light corn syrup
Flank Steak with Grilled Mango & Watermelon Chutney

Prepare grill. To prepare steak, combine first 4 ingredients
- * Steak:
- 1 * 1 tablespoon brown sugar
- 1 * 1 teaspoon salt
- 3/4 * 3/4 teaspoon ground cumin
- 3 * 3 garlic cloves, minced
- 1 * 1 (1 1/2-pound) flank steak, trimmed
- * Cooking spray
- *
- Chutney:
- 2 * 2 peeled ripe mangoes, each cut into quarters (about 1 pound)
- 1 * 1 teaspoon olive oil
- 1 * 1 cup thinly vertically sliced onion
- 1 * 1 tablespoon minced peeled fresh ginger
- 1/3 * 1/3 cup cider vinegar
- 2 * 2 tablespoons brown sugar
- 2 * 2 tablespoons fresh lime juice
- 1/4 * 1/4 teaspoon salt
- 1/4 * 1/4 teaspoon ground red pepper
- 2 * 2 cups finely diced seedless watermelon (about 3/4 pound)
- 1 1/2 * 1 1/2 tablespoons chopped fresh cilantro
- 1 1/2 * 1 1/2 tablespoons chopped fresh mint
- * Mint sprigs (optional)
- * Lime wedges (optional)
Ninfa's Green Sauce

Combine chopped tomatoes, tomatillos, jalapenos and garlic in a saucepan
- 3 medium-sized green tomatoes, coarsely chopped (you can substitute yellow if you can’t find green ones, but never use red)
- 4 tomatillos, cleaned and chopped
- 1 to 2 jalapenos, stemmed and coarsely chopped
- 3 small garlic cloves
- 3 medium-sized ripe avocados, peeled, pitted and sliced
- 4 sprigs cilantro
- 1 tsp. of salt
- 1 1/2 cups of sour cream
Deep Fried Calzone

- Canola oil, for frying (amount determined by vessel used)
- 1 recipe Perfect Pizza Dough, recipe follows
- 2 tablespoons dried oregano
- 2 tablespoons chopped fresh basil leaves
- 1 cup pizza sauce
- 2 ounces whole pepperoni
- 4 ounces mozzarella cheese, coarsely shredded
- 1 teaspoon water
- 1/4 cup grated Parmesan
- 8 fresh basil leaves, for garnish
