- 3/4 cup + 2 tablespoons (3.5 ounces) flour
- 1-1/4 teaspoons baking powder

- 1 cup + 2 tablespoons (9.25 ounces) dark brown sugar

- 1 1/2 quarts peanut oil, for frying
- 1 1/2 cups self-rising cornmeal
- 1 cup self-rising flour

Preheat the oven to 350 degrees
- 1 cup butter
- 2 cups sugar
- 2 teaspoons vanilla extract
- 4 large eggs at room temperature

Pan Roasted Chipotle Tomatillo Salsa

Spray a large nonstick skillet with cooking spray and set over medium high heat
- 4 medium tomatillos, husked, rinsed and cut in half (about 8 oz.)
- 3 cloves garlic, peeled
- 1 chipotle in adobo (more if you want more heat)
- 1/4 to 1/2 cup water
- 2 tbsp. cilantro (or more to taste)
- 2 tbsp. light sour cream (*optional)
- 1/2 tsp. kosher salt

Preheat oven to 350 F. Line a rimmed baking sheet with aluminum foil, and spray with nonstick cooking spray
- 2 1/2 quarts (10 cups) low-sodium chicken broth
- 2 cups water
- 4 carrots, cut into 1/2-inch dice
- 1 tablespoon (about 3 cloves) minced garlic, divided
- 1 bunch kale, stems removed, leaves cut into thin strips
- 1/2 cup grated Parmigiano-Reggiano cheese, plus more for serving
- 2 eggs, lightly beaten
- 1/2 cup plain bread crumbs
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 lb ground pork
- 1 1/4 cups ditalini pasta (or other small shape)

- 1 cup prechopped red onion

- 1 1/4 pounds ground turkey
- 1 tablespoon chili powder
- 2 tablespoons tomato paste
- 2 teaspoons dried oregano
- 1 teaspoon ground cumin
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (19-ounce) can cannellini beans, rinsed and drained
- 1 (14.5-ounce) can diced tomatoes, undrained
- 1 (14-ounce) can fat-free, lower-sodium chicken broth
- 1/2 cup chopped fresh cilantro

- 1 3/4 C flour

- 1/2 cup chopped ripe banana (about 1 medium)
- 7 oz semisweet or bittersweet chocolate (55-62% cacao), finely chopped
