- Ingredients
- 2 cans black beans
- 2/3 cup tomato juice (I often use a can of Rotel tomatoes instead. It gives it a nice kick!)
- 4 cloves garlic, minced
- 2 tsp cumin
- 4 T oil
- 1 tsp salt
- 4 T chopped cilantro
Szechwan Beef and Snow Pea Stir-Fry

Trim fat from beef. Cut beef into bite-size strips
- 1 lb. beef sirloin steak
- 1 T. reduced-sodium soy sauce
- 1 tsp. cornstarch
- 3 T. reduced-sodium soy sauce
- 2 T. dry sherry or water
- 2 T. Oriental chili sauce or garlic
- 2 T. water
- 1 T. cornstarch
- 1 T. toasted sesame oil
- 1 T. canola oil
- 3 cloves garlic, minced
- 2 T. minced fresh ginger
- 8 oz. fresh mushrooms, quartered
- 3 carrots, halved lengthwise and thinly sliced
- 2 medium red bell peppers, cut into thin bite-size strips
- 8 oz. fresh pea pods, trimmed and halved crosswise
- 1 green onion, thinly sliced

Lime Rice

- 1 c. white rice
- 2 c. chicken broth + 2 T
- 1 T. fresh lime juice
- 1 T garlic powder
- 1 T dried minced onion
Quiche

1. Make Quiche crust by mixing flour and salt in a bowl
- Crust:
- 1 cup and 2 T. flour
- 1/8 tsp. salt
- 1/3 cup oil
- 2 T. water
- Filling:
- 1 1/2 c. grated swiss and cheddar cheese mix.
- Fresh basil
- Zucchini
- Green pepper
- Mushrooms
- Asparagus
- Thyme
- Parmesan cheese
- 4 eggs
- 1 1/2 c. milk
- 3 T. flour
- 1/4 tsp. salt
- 1/4 tsp. dry mustard
- Avocado
Chicken, Rice, Saffron Dish

Serves 4 generous servings
- 2 T. olive oil
- 1/2 medium onion, finely chopped
- 1 pinch saffron (about 10 threads)
- 1 tsp. finely chopped fresh rosemary
- 2 cloves garlic, finely chopped
- 4 oz. mushrooms, chopped and cut into bite-sized pieces
- 4 oz. chicken sausage (or such) sliced and halved
- 1/2 pureed tomatoes OR if like spicier, 1 can Rotel tomatoes
- 4 cups chicken broth
- Salt
- Meat from 1/2 rotisserie chicken (about 1 pound), skin discarded, torn into bite size pieces
- 1 cup short-grain rice
- Zest and juice of 1/2 lemon
- 1 1/2 cups baby spinach leaves
Apple Dapple Cake

Preheat oven to 325. Combine sugar and oil and beat well
- 2 cups sugar
- 1 1/2 c. corn oil
- 3 eggs
- 3 c. unsifted all-purpose flour
- 1 tsp. baking soda
- 1 tsp. salt
- 3 c. finely diced apples
- 2 c. chopped pecans
- 2 tsp. vanilla extract
- Glaze
- 1 c. dark brown sugar
- 1/4 lb. butter
- 1/2 c. heavy cream
Oatmeal Chocolate Chip Cookies

Makes 3 dozen
- 1 cup butter
- 1 cup packed brown sugar
- 1/2 cup granulated sugar
- 1 tsp. vanilla
- 2 eggs
- 2 cups flour
- 1/2 tsp. salt
- 2 tsp. baking powder
- 2 cups quick oats
- 2 cups (12 oz.) semi-sweet chocolate chip cookies
Cinnamon Syrup

Combine sugar, syrup, water, and cinnamon in a saucepan
- 1 cup sugar
- 1/2 c. light corn syrup
- 1/4 c. water
- 3/4 tsp. cinnamon
- 1/2 c. evaporated milk
Creamy Tomatillo Dressing

- Ingredients:
- Creamy Tomatillo Dressing
- 3 tomatillos, peeled and cut in 1/4
- Juice of 1/2 lime
- 1/2 c buttermilk
- 1/2 c mayo
- 1/2 c sour cream
- 1 pkg dry ranch buttermilk dressing
- 1 c fresh chopped cilantro
- 6 green onions, with ends
- 2 cloves crushed garlic
- 3 tsp sugar
- 1 jalapeno, sliced thin, and added to taste

Preheat oven to 375. Line cookie sheets with parchment paper

- 1/2 cup sugar
- Lemon or orange zest
- 10 tablespoons butter, chilled
- 1 cup heavy cream
- 3/4 cup dried fruit (cranberries or currants)
