Wild Rice Salad With Cashews

In a strainer, rinse wild rice under cold running water
- Dressing:
- 1 cup uncooked wild rice or wild rice mix from Costco
- 4 c. vegetable or chicken broth
- 3 T. olive oil
- 1 1/2 c. chopped red pepper
- 3/4 c. cashews, coarsely chopped
- 2 green onions
- 3 T. seasoned rice vinegar or apple cider vinegar
- 2 T. olive oil
- 1 T. Asian sesame oil
- 1 clove garlic, minced
- 1/4 tsp salt
- Dash of freshly ground pepper
Wild Rice and Pumpkin Pilaf

- 1 c. wild rice or 3/4 c. brown rice and 1/4 c. wild rice
- 2 T. olive oil
- 2 medium onions, peeled and finely chopped (1 1/3 c.)
- 3 cloves garlic peeled and minced
- 1/2 c. chopped red pepper
- 1/3 lb. mushrooms, sliced
- 2 1/4 c. vegetable broth
- 1 1/4 cup (1/2 lb.) peeled, diced pumpkin or winter squash
- 1/2 tsp. thyme
- 1/2 tsp. rosemary
- 1 T. soy sauce
- 2 T. dry sherry (optional)
- 1/4 c. sliced almonds, lightly toasted.

Thanksgiving Stuffing
- 1/4 cup (1/2 stick) butter
- 1 tablespoon canola oil
- 1 cup chopped onion
- 1 cup chopped celery
- 1 cup chopped green bell pepper
- 2 garlic cloves, chopped
- 1 pound hot sausage (I use ground)
- 1 12oz box seasoned corn bread stuffing mix
- 2 1/4 cups low-salt chicken broth
- 1/2 cup dry red wine
- 2 tablespoons chopped fresh sage
- 1 tablespoon chopped fresh thyme
- 1 tablespoon Creole or Cajun seasoning (I get Cajun seasoning at Winco in the bulk foods)
- 3 large eggs, beaten to blend
Vegetable Quiche

Prepare Crust: Mix 1 cup and 2 T
- Crust:
- 1 c. and 2 T. flour
- 1/8 tsp salt
- 1/3 cup oil
- 2 T. water
- Quiche:
- 1/4 - 1/3 lb. cheese. I like a mix of swiss and cheddar
- 1/2 lb. sauteed spinach
- 1/2 lb. mushrooms
- Asparagus
- Snippets of fresh herbs: basil, thyme
- 4 eggs
- 1 1/2 c. milk.
- Avocados
- Parmesan cheese
