  • 1 cup uncooked wild rice or wild rice mix from Costco
  • 4 c. vegetable or chicken broth
  • 3 T. olive oil
  • 1 1/2 c. chopped red pepper
  • 3/4 c. cashews, coarsely chopped
  • 2 green onions
  • 3 T. seasoned rice vinegar or apple cider vinegar
  • 2 T. olive oil
  • 1 T. Asian sesame oil
  • 1 clove garlic, minced
  • 1/4 tsp salt
  • Dash of freshly ground pepper

  • 1 tablespoon Creole or Cajun seasoning (I get Cajun seasoning at Winco in the bulk foods)
