Wild Greens with Cranberry Vinaigrette

For Vinaigrette: Combine cranberries, sugar, and cider vinegar
- Vinaigrette:
- 2/3 c. cranberries
- 1/4 c. sugar
- 1/2 c. cider vinegar
- 1 tsp. Dijon
- 1/2 - 3/4 c. salad oil
- salt and pepper to taste
- 1/4 c. orange juice
- Walnuts:
- 1/2 c. chopped walnuts
- 1 1/2 tsp. butter
- cinnamon
- cayenne
- 2 T. honey
- salt
- Salad:
- 1 head butter lettuce
- 4 c. mixed greens (romaine, kale, endive, arugula, etc.)
- 1 red apple sliced in wedges
- 1/2 red onion thinly sliced
Nutmeg Scented Scones

Preparation Preheat oven to 425°F
- 2 cups all purpose flour
- 1/3 cup golden brown sugar
- 2 teaspoons baking powder
- 1 1/4 teaspoons freshly grated whole nutmeg or ground nutmeg
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 6 tablespoons (3/4 stick) chilled unsalted butter, cut into 1/2-inch cubes
- 1 cup sour cream
- 1 egg white, beaten to blend with 2 teaspoons water (for glaze)
- 2 teaspoons sugar
Cajun Grilled Shrimp

Place shrimp in large resealable plastic bag
- 2 lbs. uncooked shrimp, peeled, deveined
- 3/4 c. olive oil
- 3/4 c. red wine vinegar
- 1/4 c. Creole or Cajun seasoning
- 6 large garlic cloves, finely chopped
- Grilled crusty bread (optional)
- 6 metal skewers
Italian Stuffed Flank Steak

Preheat the oven to 350 Place the spinach in a saucepan with just the water that clings to the leaves
- 8 oz. fresh spinach, trimmed and well rinsed
- 1/2 c. dried bread crumbs
- 1/2 c. freshly grated Parmesan cheese
- 1/4 c. olive oil
- 2 cloves garlic
- 3 red bell peppers, roasted
- 1 flank steak (about 1 1/2 lbs.)butterflied
- salt and freshly ground pepper to taste
- 4 oz. thinly sliced prosciutto
- 1 fresh hot cherry pepper, cored, seeded and minced

- For the crust:
- 2 sticks unsalted butter cut into pieces and at room temperature.
- 2 cups all-purpose flour
- 1 cup confectioners' sugar (lightly in cup)
- Pinch of salt
- For the filling:
- 4 large eggs
- 2 c. granulated sugar
- 6 T. all-purpose flour
- 6 T. fresh lemon juice (2 lemons)
Spiced Basmati Rice and Sweet Corn Pilaf, with Yogurt Raita

- Yogurt Raita:
- 2 c. basmati rice
- 4 T. unsalted butter or ghee
- 2 tsp. minced garlic
- 1 T. grated ginger
- 1/2 tsp. turmeric
- pinch of saffron
- 1/2 tsp. coriander seeds
- 1/2 tsp. cumin seeds
- 8 whole cloves
- 1/2 tsp. black peppercorns
- 2 cardamom pods
- 1 large onion, diced (about 2 cups)
- 3 cups fresh corn kernels (about 6 ears)
- salt
- 1 c. golden raisins
- 2 c. chicken broth, vegetable broth or water
- 2 T. chopped cilantro
- 2 T. chopped scallions
- 1/4 c. roasted cashews
- 1 1/2 c. plain whole milk yogurt
- 1 tsp. grated ginger
- 1 T. finely diced red chili, like Fresno or red jalapeno
- 1/2 tsp. salt
- 1 tsp. vegetable oil
- 1/2 tsp. black mustard seeds
- 1/2 tsp. cumin seeds
- 2 T. chopped mint
Easy Baked Toffee

Heat oven to 375. Lightly butter a 9x13 pan
- Pecans, almonds, pistachios or macadamias may be substituted for the walnuts.
- 1 cup (2 sticks) butter
- 1 cup light brown sugar, packed
- 2 1/2 cups finely chopped walnuts
- 1 cup semi-sweet chocolate chips
Orange Glazed Pound Cake

Preheat oven to 350. Generously grease and flour the sides and bottom of a 10 inch tube pan
- Cake:
- 1 cup unsalted butter, softened
- 2 2/3 cups sugar
- 6 large eggs
- 3 cups sifted cake flour
- 1/2 tsp. salt
- 1/4 teaspoon baking soda
- 1 cup sour cream
- 1 tsp. vanilla
- Grated zest of 1 orange
- 2 T. orange juice
- Glaze:
- 2 cups powdered sugar
- Grated zest of 1 orange
- 3 T. orange juice
Cauliflower Curry

Trim and wash the cauliflower and break it up into very small flowerets
- 1 head of cauliflower
- 1 small potato
- 4 T. vegetable oil
- 1 tsp. mustard seeds
- 1 tsp. ground turmeric
- 1/2 tsp. ground cumin
- 1/2 tsp. ground coriander
- 1/2 tsp. cayenne pepper
- 1 clove garlic, minced
- 1/2 onion, slivered
- 1 tsp. salt
- 1 1/4 c. water
- 1 medium-sized tomato, chopped
- 2 T. lemon juice
