Hoisin Glazed Salmon

Glazy, crispy, umami goodness
- 2 lbs. piece of salmon, center cut with skin on
- 1/4 cup Hoisin sauce
- 2 Tbs. light brown sugar
- 2 Tbs. orange juice
- 1 Tbs. fresh lime juice
- 1 Tbs. soy sauce
- 2 tsp. grated ginger
- 1 medium garlic clove, grated
- 1 tsp. Coleman’s dry mustard
- 1 tsp. sesame oil
Garlic and Herb Cheese Stuffed Burgers

- 1 pound ground beef or chuck
- 4 tablespoons Alouette garlic and herb cheese
- 2 teaspoons house seasoning
- 1/3 loaf french bread, cut in half
- 4 romaine lettuce leaves
- sliced red onions
Southwest Bean Salad

This can be made with a vast array of beans and/or spices
- 1 cup fresh, or thawed frozen corn
- 1 cup black beans, rinsed and drained
- 1 cup kidney beans, rinsed and drained
- 1 cup pinto bean, rinsed and drained
- 1 cup black eyed peas, rinsed and drained
- 1 large or 2 small tomatoes, diced
- 1/2 jalepeno pepper, minced
- 1/4 large red onion, diced
- 1 large garlic clove, minced
- 1/4 cup champagne vinegar
- 2 tablespoons extra virgin olive oil
- 1/4 cup lime juice
- 1 teaspoon dried cilantro (I wish I had of thought to grab some fresh)
Welch Rarebit

A good cheese sauce on toast points for anytime snacks
- 2 tablespoons butter
- 2 tablespoons flour
- 1 tablespoon mustard powder, or to taste
- 1/2 teaspoon cayenne, or to taste
- 3/4 cup strong dark beer, like Guinness
- 2 tablespoons Worcestershire sauce, or to taste
- 1 pound Cheddar, Double Gloucester or other English cheese (or other good semi-hard cheese, like Comté or Gruyère, or a mixture), grated
- 4 to 8 pieces lightly toasted bread
Chicken Larb

Delicious Thai style lettuce wraps
- Dressing:
- 1/3 cup fresh lime juice, from about 5 limes
- 3 tablespoons fresh lemon juice, from 1 large lemon
- 2 tablespoons fish sauce
- 2 tablespoons honey
- Larb:
- 3 tablespoons vegetable or canola oil
- 1/2 red onion, diced
- 3 shallots, thinly sliced
- 1 (4-inch) piece lemongrass, minced (about 1/4 cup)
- 1 Thai chile, such as prik kee noo, or 1 serrano chile, stemmed and thinly sliced
- Kosher salt
- 1 1/2 pounds ground chicken
- 1 tablespoon toasted rice powder
- 1/2 cup chopped fresh mint leaves, (I used much less)
- Freshly ground black pepper
- 1 head butter lettuce, leaves separated

- 6 tablespoons unsalted butter
- 1 small onion, chopped
- 1/4 cup all-purpose flour
- 2 cups half-and-half
- 3 cups low-sodium chicken broth
- 2 bay leaves
- 1/4 teaspoon freshly grated nutmeg
- Kosher salt and freshly ground pepper
- 4 7-inch sourdough bread boules (round loaves)
- 4 cups broccoli florets (about 1 head)
- 1 large carrot, diced
- 2 1/2 cups (about 8 ounces) grated sharp white and yellow cheddar cheese, plus more for garnish
Jacket Potatoes with Bacon, Mushroom and Black Peppercorn Sauce

A delicious altervative to Sour Cream and Cheese
- 4 medium-sized russet or other baking potatoes, well scrubbed
- 12 ounces bacon, chopped
- 8 ounces sliced button mushrooms
- 1/4 cup brandy
- 1 tablespoon green peppercorns, drenched in cold water-I used my three color grinder instead set for large grind
- 1 cup cream
- Salt and pepper
- Butter, for topping
Homestyle Cube Steaks and gravy

Old fashioned southern cube steaks in gravy
- 1 1/2 to 2 pounds cube steaks or 1/2 inch round steaks (pounded with a meat mallot)
- 1/4 cup oil
- 2 beaten eggs
- 1 cup flour
- 1 cup fine cracker meal
- 2 cups milk
- 1 tablespoon worchestershire sauce
- 2 teaspoons garlic powder

Three Pepper Chili

Winter Warming Chili adapted from Ellie Krieger of Food Network
- 1 tablespoon olive oil
- 1 onion, diced
- 4 garlic cloves, minced
- 1 red bell pepper char grilled, peeled, seeded and chopped into 1/4 inch pieces
- 1 yellow pepper char grilled, peeled, seeded and chopped into 1/4 inch pieces
- 2 poblano peppers char grilled, peeled, seeded and chopped into 1/4 inch pieces
- 3 celery ribs, diced
- 2 carrots, diced- ommitted
- 1 pound extra-lean ground beef
- 1 pound mild italian sausage
- 1 (28-ounce)can tomato puree
- 1 (14.5-ounce) can diced tomatoes
- 2 cups water, broth or beer
- 1 chipotle chile in adobo sauce, seeded and minced
- 2 teaspoons adobo sauce from the can of chipotles
- 1 tablespoon cumin
- 2 teaspoons chile powder
- 1 tablespoon paprika
- 1 teaspoon rosemary
- 1 -1/2 teaspoons cayenne
- 1 tablespoon dried oregano
- 1 tablespoon cilantro
- Salt and freshly ground black pepper
