Vietnamese Beef-Noodle Soup with Asian Greens, okay Vietnamese/Japanese

A slightly spicy asian beef-noodle soup
- 1 (8-ounce) sirloin steak
- 4 ounces uncooked wide (maifun) thin rice stick noodles
- 1 1/2 cups thinly sliced yellow onion
- 3 whole cloves
- 2 cardamom pods
- 2 garlic cloves, halved
- 1 (3-inch) piece peeled fresh ginger, thinly sliced
- 1 star anise
- 4 cups fat-free, less-sodium beef broth
- 2 cups water (I used dashi)
- 1 tablespoon less-sodium soy sauce
- 1 teaspoon brown sugar
- 2 teaspoons fish sauce
- 4 cups baby bok choy leaves
- 1 cup snow peas, trimmed
- 1 small fresh Thai chile, thinly sliced into rings (no thai chiles in town anywhere! I used 2 teaspoons sambal oelek)
- 2 tablespoons light miso
- 1 teaspoon sesame oil
- 1 cup fresh bean sprouts
- 1/4 cup fresh (thai) basil leaves
- 1/4 cup fresh mint leaves
- 4 lime wedges
Pork Schnitzel and Vegetable Rice Pilaf

Simple unadulterated Austrian style cutlets and fresh vegetables in a rice pilaf
- For the Pork Schnitzel:
- 1 cup flour
- 3 cups bread crumbs,(preferably fresh) We prefer Panko
- 3 eggs, beaten
- salt and pepper
- 1 pound thinly sliced veal, (can also be made with chicken, turkey, or pork)about 1/8 inch thick
- 2 tablespoons butter plus 2 tablespoons olive oilor all oil or all clarified butter
- Chopped fresh parsley leaves for garnish
- 1 lemon, quartered, for serving
- For the Vegetable Rice Pilaf:
- 2 tablespoons canola oil
- 1/2 cup onion, small dice
- 1 medium carrot, small dice
- 1 medium celery stalk, small dice
- 1/4 cup sugar snap peas, sliced thin
- 2 scallions, sliced thin
- 1/4 cup peas
- 1 cup long grain rice
- 3 tablespoons orzo
- 2 cups chicken stock
- salt and pepper
- fresh chives for garnish, chopped
Hearty Chicken Tortilla Soup

A smoky, rich, and hearty bowl of belly warming soup
- 1 large carrot, diced
- 1 large celery stalk, diced
- 1 small onion, diced
- 4 garlic cloves, minced
- 1 jalapeno pepper, seeded and diced (not pictured)
- 1 Tablespoon guajillo chile powder
- 1 Tablespoon arbol chili powder
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1 teaspoon cilantro, dried (couldn't get my hands on fresh at the time) (also not pictured)
- 1 15 ounce can black beans, drained and rinsed
- 1 1/2 cups frozen corn
- 1 cup zucchini, par boiled and diced
- 1 cup yellow squash, par boiled and diced
- 1 28 ounce can tomatoes, drained
- 2 quarts chicken broth
- 2 large chicken breasts, cooked and diced or shredded
- 1 lime, juiced
- Toppings

- diced avocado
- crumbled queso fresco or mild feta cheese

Pork Chops with Tarragon Sauce and Cornichons

This is a very different and very unique combination of flavors
- 6 tablespoons (3/4 stick) butter, cut into 6 pieces, divided
- 4 3/4 -inch-thick pork rib chops
- 5 teaspoons chopped fresh tarragon, divided
- 1/2 cup sliced shallots (about 2 large)
- 1/4 cup thinly sliced cornichons (gherkins)
- 1 tablespoon whole grain mustard
- 1/2 cup low-salt chicken broth
- 1/4 cup apple juice (substituted apple sauce, no apple juice)
Everyone's Shrimp Scampi

Simple, classic, yet always delicious and satisfying
- 1/3 cup extra virgin olive oil, or more as needed
- 1 teaspoon red pepper flakes
- 1 shallot, minced
- 3 or 4 big cloves of garlic, minced
- 1 1/2 About 1 1/2 pounds shrimp, 20 to 30 per pound, peeled, rinsed, and dried
- Salt and fresh ground pepper
- 1/4 cup fresh parsley, Yeah, I used the dried, (mine is withering in the heat we're having)
- 1 tablespoon fresh squeezed lemon juice
- 1/2 cup white wine

- 3 tablespoons extra virgin olive oil
- 1 large or 2 medium onions
