Michael's Spin on Emeril's Jalapeno Poppers

Ridiculously delicious baked stuffed jalapeno poppers
- 12 fresh jalapeno peppers, halved lengthwise, stems, seeds and membranes removed
- 1/2 pound fresh ground sausage, cooked until golden brown
- 8 ounces cream cheese, softened
- 1 1/2 cups grated Cheddar cheese
- 1/2 teaspoon ground cumin
- 1/2 teaspoon cayenne, or less, to taste
- 2 large eggs
- 2 tablespoons milk
- 8 teaspoons Essence, recipe follows
- 1 cup panko crumbs, or fine dry breadcrumbs
- 1/2 cup all-purpose flour
Shrimp in Garlic Saffron Broth

- Large pinch of saffron
- 2 teaspoons extra-virgin olive oil
- 4 cloves garlic, minced
- 2 large shallots, finely chopped

- 7 cups strong white bread flour or Tipo "00" flour or 5 cups strong white bread flour or Tipo "00" flour, plus 2 cups finely ground semolina flour
- 1 level tablespoon fine sea salt
- 2 (1/4-ounce) packets active dried yeast
- 1 tablespoon raw sugar
- 4 tablespoons extra-virgin olive oil
- 2 1/2 cups lukewarm water

- 1/3 cup Colavita Garden Style Sauce
- 2 cloves garlic, minced
- 4 ounces cooked italian sausage, casing removed
- 4 ounces cooked chorizo, casing removed
- 1/2 cup chopped fresh spinach
- 1/3 cup button mushrooms, sliced
- 20 slices pepperoni
- 1 cup mozzarella cheese, shredded
Mexican Pulled Pork-Carnitas

- 1 (3 1/2-to 4-pound) boneless pork butt , fat cap trimmed to 1/8 inch thick, cut into 2-inch chunks

- 2 tablespoons juice from 1 lime
- 2 cups water

My Cheesiest Mac and Cheese

The creamiest, cheesiest, heavenly macaroni and cheese
- 2 cups elbow macaroni or pasta of your choice, cooked al dente
- 2 Tbsp. butter
- 2 Tbsp AP (all purpose) flour
- 2 cups half and half
- 1/4 tsp. salt
- 1/8 tsp pepper
- 1/4 - 1/2 tsp cayenne pepper
- 1/2 tsp dry mustard (Colemans)
- 8 ounces cheddar cheese, shredded
- 4 ounces Velveeta cheese, cubed
- 4 ounces cream cheese, cubed (room temperature)
- 1/2 cup parmesan cheese, shredded
- 1/4 cup asiago cheese, shredded
My Picadillo Empanadas

Delicious Latin inspired empanadas
- 2 tablespoons extra virgin olive oil
- 1 pound ground beef
- 1/2 cup sofrito
- 1 small yellow onion, diced
- 1 garlic clove, minced
- 1/4 cup Manzanilla (Spanish) olives, roughly chopped
- 2 hard boiled eggs, diced
- 2-3 medium Yukon Gold potatoes, diced and boiled until just cooked (firm to touch)
- 10 Discos - Goya Empanada wrappers
Chicken Makhani-Butter Chicken

Combine first 9 ingredients and marinate overnight
- For the Marinade:
- 4 pieces boneless, skinless chicken thighs
- 2 cups buttermilk
- 2 cloves garlic, minced
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon cayenne pepper
- ¼ teaspoon ground coriander
- ¼ teaspoon cumin
- ¼ teaspoon cardamom
- For the Sauce:
- 1 tablespoon oil
- 1 small onion, minced
- 2 tablespoons butter
- 2 teaspoons lemon juice
- 2 teaspoons ginger, finely grated
- 2 garlic cloves, minced into a paste
- 2 teaspoons garam masala, divided
- 1 bay leaf
- 1 can (14.5 oz. can) tomato sauce
- 1 can (14.5 oz. can) petite diced tomatoes
- 1 pint whipping cream
- 1 bunch chopped cilantro, to taste
Eggplant Timbale

Pasta, italian sausage, and ground beef smothered in marinara and cheese all wrapped up in velvety eggplant
- 2 medium eggplants, sliced 1/4-inch thick
- 1/3 cup olive oil, plus 2 tablespoons
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 pound penne pasta
- 1 medium onion, diced
- 1/2 pound ground beef
- 1/2 pound Italian pork sausage
- 1/4 cup Marsala wine
- 1 cup frozen peas, thawed
- 2 cups marinara sauce, jarred or homemade
- 1 1/2 cups diced smoked mozzarella cheese (about 6 ounces) I used regular mozzarella, as I couldn't find the smoked in the grocery store I was in)
- 3/4 cup grated Pecorino Romano cheese, plus 1/4 cup (Also used parmesan, no pecorino romano either)
- 1 cup chopped fresh basil leaves, (used about 1/4cup, thought a cupfull was too much for my liking)
- Special equipment: 9-inch springform pan
