Chili for a Crowd

In 6-qt dutch oven, over medium heat, saute ground beef, stirring occasionally, until red color disappears
- 2 1/2 # ground chuck
- 2 cups chopped onions
- 2 cloves garlic, pressed
- 3 Tbs chili powder
- 1 1/2 tsp dried oregano leaves
- 1 tsp dried basil leaves
- 1/4 tsp crushed red pepper
- 1 tsp ground cumin
- 1 Tbs sugar
- 2 tsp salt
- 2 cans (1#size) tomatoes, undrained
- 2 cans (8 oz size) tomato sauce
- 1 can (6 oz) tomato paste
- 3 cans (1# size) kidney beans, drained and rinsed
- 4 cups fluffy cooked rice
- 1 cup finely chopped onion
- cheddar cheese
- Black olives, sliced

- 1 1/2 tsp dried oregano
- 1 cup freshly grated Parmesan cheese (about 3 oz)
- 1/2 tsp Worcestershire sauce
- 1/2 tsp garlic powder
- 1 8-oz package cream cheese, room temp
- 1 large egg yolk
- Olive Oil
- 24 large mushrooms, stemmed (about 2 inch diameter)

Tex-Mex Dip

Peel, pit and mash avocados with lemon juice, salt and pepper
- 3 ripe avocados
- 2 Tbs lemon juice
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1 package taco seasoning mix
- 2 cans (10 1/2 oz) plain bean dip
- 1 bunch green onions
- 3 medium tomtoes, cored, drained and chopped
- 1 8-oz pkg sharp cheddar cheese
- 2 3-1/2 oz cans chopped ripe olives
Blueberry Sauce

Combine sugar, salt and cornstarch
- 1/2 cup sugar
- dash of salt
- 2 Tbs cornstarch
- 1/2 cup water
- 1 pint blueberries or 2 cups frozen berries
- 1 Tbs lemon juice
Meatballs with Grape Jelly and Chili Sauce

This recipe makes 60 meatballs in a sweet-spicy sauce
- Meatballs:
- 1 lb ground beef
- 1/2 cup bread crumbs
- 1/3 cup onion, minced
- 1/4 cup milk
- 1 egg, beaten
- 1 tbsp fresh parsley, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp Worcestershire sauce
- Oil for frying
- Sauce:
- 12 oz jar chili sauce or 1 cup barbecue sauce
- 10 oz jar grape jelly
