Warm German Potato Salad

Simmer whole, unpeeled potatoes in salted water until just tender
- 2 1/4 pounds waxy potatoes, such as yukon gold
- 2 slices bacon, diced
- 2 1/2 cups chicken broth
- 1/4 cup white wine vinegar
- 1 cup diced onion
- 1 tsp sugar, or to taste
- 1 tsp salt, or to taste
- Ground white pepper, or to taste
- 1/4 cup vegetable oil
- 2 Tbs mild brown mustard
- 1/2 cups chopped chives
Classic Cola-Glazed Ham

Remove skin from ham, and trim fat to 1/4 inch thickness
- 1 (6-7 lb.) fully cooked, bone-in ham
- 30-35 whole cloves
- 1 (16-oz) box dark brown sugar
- 1 cup spicy brown mustard
- 1 cup cola soft drink
- 1/2 cup bourbon or apple juice
Swedish Meatballs and Gravy

Meatballs: Soak crumbs in milk
- Meatballs:
- 2 # ground chuck
- 1/2 # ground pork
- 1 1/4 cups dry bread crumbs
- 1 1/4 cups milk
- 1 egg, slightly beaten
- 1/4 cup minced onions
- 2 tsp salt
- 1 tsp pepper
- 1 tsp ground allspice
- 1/2 tsp nutmeg
- Sauce:
- 2 Tbs margarine
- 1 Tbs flour
- 1-10 1/2 oz can beef consomme
- 1/2 cup heavy or whipping cream
- Kitchen bouquet as needed for color and thickening
- 1 bay leaf
Chow Mein

Super good!!
- 8 ounces thin lo main noodles
- 1 Tbs peanut oil
- 1 carrot, julienned
- 1/2 head napa cabbage, sliced thin
- 1/2 onion, sliced
- 1/4 cup chicken broth
- 1/4 cup soy sauce
- 1 tsp sesame oil
- Sliced green onions, for topping
Cheddar Chicken

Heat oven to 350. In a bowl, combine the crackers, cheese, garlic and 1/4 tsp each salt and pepper
- 16 buttery crackers (ritz), crushed (about 3/4 cup)
- 6 oz sharp cheddar cheese, grated
- 1 clove garlic, finely chopped
- Salt and Pepper
- 4 6-oz boneless, skinless chicken breasts
- 4 Tbs unsalted butter, melted
- Serve with wild rice and steamed green beans
Chocolate Chip Cookies-Beth

Pre-heat oven to 350 degrees
- 2 sticks soft butter
- 3/4 cup packed brown sugar
- 1/2 cup sugar
- 2 large eggs
- 1 Tbs vanilla extract
- 2 3/4 cup flour
- 11/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup chopped pecans
- 1 bag heath pieces
- 2 bags milk chocolate chips
Date Nut Bread

This is Great-Grandma Pieps Christmas bread
- 1 cup sugar
- 1 cup brown sugar
- 3 Tbs shortening
- 2 eggs, well-beaten
- 1 tsp salt
- 1 cup nuts, chopped
- 2 cups dates or raisins
- 2 cups boiling water
- 2 tsp baking soda
- 2 tsp vanilla
- 4 cups flour
Apricot-Pecan Stuffing

In large skillet, cook the leeks and onions over medium heat in hot butter til tender but not brown
- 3 medium leeks, sliced (1 cup)
- 1 medium onion, chopped (1/2 cup)
- 1/4 cup butter or margarine
- 2 medium golden delicious apples, peeled, cored and chopped
- 1 cup chopped pecans
- 3/4 cup snipped dried apricots
- 1/2 tsp ground nutmeg
- 4 cups dry whole wheat or white bread cubes
- 1 Tbs snipped fresh or 1/2 tsp dried rosemary, crushed
- 1 Tbs snipped fresh or 1/2 tsp dried thyme, crushed
- 1 Tbs snipped fresh parsley
- 1/2-3/4 cup chicken broth
- 1 egg, beaten
- 1 tsp salt
- 1/2 tsp pepper

In a shallow bowl, combine first 9 ingredients
- 1 1/4 cups crushed corn flakes
- 1 tsp onion powder
- 1 tsp poultry seasoning
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 garlic powder
- 1/2 tsp dried marjoram
- 1/2 tsp dried thyme
- 1/2 tsp pepper
- 1/4 cup lemon juice
- 1/4 cup French salad dressing
- 6 bone-in chicken breasts (8 ounces each), skin removed
