Cut butter into flour, sugar and oatmeal until coarse crumbs form
- 6 Tbs butter
- 3/4 cup flour
- 3/4 cup brown sugar
- 1/2 cup oatmeal
Paella for a Crowd

Drizzle chicken with 2 Tbs of oil, sprinkle with paprika, oregano, salt and pepper; toss to coat
- 2 # boneless, skinless chicken thighs, cut into 2 inch pieces
- 1/4 cup olive oil, divided
- 1 Tbs paprika
- 2 tsp dried oregano
- Salt and pepper
- 1 # cooked Kielbasa
- 1 large onion, cut into medium dice
- 1 large red bell pepper, cut into medium dice
- 4 large peeled garlic cloves, smashed
- 2 cups short or medium grain rice, such as risotto rice
- 1 large pinch saffron threads
- 1 tsp red pepper flakes
- 1 14.5 oz can diced tomatoes
- 1 quart chicken broth
- 1 # (16-20) peeled and deveined shrimp
- 1 # bay scallops
- 1 cup frozen peas, thawed
- 1/2 cup chopped fresh parsley

Oven-Baked Chicken Parmesan

Heat oven to 400. Coat chicken with coating mix as directed on package; place in 9x13 pan
- 6 small boneless, skinless chicken breast (1 1/2 pounds)
- 1 package Shake 'N Bake Chicken Coating Mix
- 2 cups spaghetti sauce
- 1 1/2 cups shredded mozzarella
- 1/4 cup grated parmesan cheese
- 1 tsp dried oregano
Fried Crispy Chicken

Heat oven to 350. Line a rimmed baking sheet with parchment paper or foil
- 4 cups rice cereal, lightly crushed
- 3/4 cup grated parmesan (3 oz)
- 2 Tbs olilve oil
- 1 Tbs paprika
- 1 tsp ground cumin
- Salt and pepper
- 1 cup lowfat plain yogurt
- 8 6-oz boneless, skinless chicken breasts
Ripe and Rye Canapes

Preheat oven to 375. Mix together the first 5 ingredients
- 8 slices bacon, cooked and crumbled
- 2 cups shredded sharp cheddar cheese
- 1-3oz can sliced pitted ripe olives
- 2 cups mayonnaise
- 1/2 cup grated onion

Root Beer Pulled Pork Sandwiches

Brown trimmed meat in skillet in oil 5-10 minutes on each side
- Meat:
- 2 1/2-3 pounds pork sirloin roast
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 Tbs oil
- 1 large onion, cut into wedges
- 2 Tbs minced garlic
- 1-12 oz can root beer
- Sauce:
- 2-12 oz cans root beer
- 1-8 oz bottle chile sauce
- few drops hot sauce
- 8-10 hamburger buns
- Lettuce
- Tomatoes
Toffee Apple Tart Rustica

Preheat oven to 425. Unfold crust; place on ungreased cookie sheet
- 1 refrigerated piecrust, softened as directed on package
- 4 cups (4 medium) thinly sliced, peeled apples
- 3/4 cup english toffee baking bits (not chocolate-coated)
- 2 Tbs sugar
- 2 Tbs flour
- 2 Tbs whipping cream
- 1 tsp sugar
Tangy Marinated Cheese

Slice pieces of cheese in half lengthwise and then into 12 slices crosswise
- 8 oz sharp cheddar
- 8 oz fresh mozzarella
- 2 cloves garlic, minced
- 1/4 cup jarred pimientos, drained and chopped
- 1/4 cup pitted green olives, chopped
- 1/4 cup pitted black olives. chopped
- 2 Tbs parsley, chopped
- 2 tsp Italian seasoning
- Pepper
- 3 Tbs extra-virgin olive oil
Deviled Eggs

Remove yolks and place them in a medium bowl
- 12 large eggs-cooked, peeled and cut lengthwise
- 3 Tbs mayonnaise
- 2 Tbs dijon mustard
- 1 Tbs minced sweet pickle
- Dash of Worcestershire sauce
- Salt and black pepper
- Tabasco sauce to taste
- 2 Tbs chopped fresh parsley, for garnish
- Paprika, for garnish
