Cupcakes for Mini Heart Pan

Preheat oven to 350. Prepare pan with vegetable pan spray
- 1 cup all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 4 Tbs butter, softened
- 1/2 cup granulated sugar
- 1 egg
- 1/2 tsp vanilla
- 1/2 cup milk
Italian Beef

Place roast in crock pot. Cover meat with spices and add consomme and water
- 5 pounds cheap roast (round, rump or boston)
- 1 Tbs salt
- 1 Tbs pepper
- 1 Tbs Italian seasoning
- 1/2 tsp fennel seed
- 1/2 tsp oregano
- 1 10 1/2 oz can beef consomme
- 1 cup water
- 2 cloves garlic, finely chopped
Lemon Drop Tartlets

In a small saucepan over medium heat, whisk eggs, sugar and lemon juice until well-blended
- 3 eggs
- 1 cup sugar
- 1/2 cup lemon juice
- 2 Tbs butter
- 1/3 cup cornstarch
- 1 package (1.9 oz) mini puff pastry shells, thawed
- 1 cup whipped cream
- Fresh raspberries, blueberries and strawberries, for garnish
Mexican Lasagna

Always a crowd pleaser. Can make with all light ingredients with no difference in taste
- 2 # ground beef
- 1 can (16 oz) refried beans
- 1 can (4 oz) chopped green chilies
- 1 envelope taco seasoning
- 2 Tbs hot salsa
- 12 ounces cooked lasagna noodles
- 4 cups (16 oz) shredded Co-Jack or Monterey Jack cheese, divided
- 1 jar (16 oz) medium salsa
- 2 cups (16 oz) sour cream
- 1 can (2 1/4 oz) sliced black olives, drained
- 3 green onions, chopped

These poppers are a hit anywhere you want to take them
- Crust:
- half recipe-
- 1 sleeve graham crackers (about 9) 4
- 2 tsp sugar 1
- 1/4 tsp salt 1/8
- 4 Tbs butter, melted 2
- Filling:
- 2 (8 oz) pkgs. cream cheese, softened 1
- 1 cup sugar 1/2
- 2 tsp vanilla 1
- 1/8 tsp salt dash
- 3 large eggs 2
- 1/4 cup heavy cream 1/8
- Raspberries and mint sprigs, for topping
Green Bean Casserole

Mix soup, milk, soy sauce, pepper, beans, water chestnuts, almonds and 2/3 cup onions in 1 1/2 quart casserole
- 1 can (10 3/4) cream of mushroom soup
- 1/2 cup milk
- 1 tsp soy sauce
- dash pepper
- 4 cups cooked cut green beans
- 1 1/3 cup french fried onions
- 1 small can water chestnuts
- 1/4 cup slivered almonds
Chipotle Chicken Chili

Spicy and yummy. Great for a cold week-end
- 2 Tbs olive oil
- 4 cloves garlic, minced
- 1 onion, diced
- 2 pounds boneless, skinless chicken breasts, cut into large dice
- 1 12-oz bottle good beer
- 1 14-oz can black beans, drained and rinsed
- 1 14-oz can kidney beans, drained and rinsed
- 1 14-oz can pinto beans, drained and rinsed
- 1 14-oz can diced tomatoes
- 1 Tbs chili powder
- 1 Tbs ground cumin
- 1 tsp salt
- 1 canned chipotle pepper in adobo sauce, minced (use only 1 chili not 1 can))
- 1/4 cup flour
- 5 limes, 1 juiced, 4 cut into wedges
- 1 pound sharp cheese, grated
- 16 oz sour cream
- 5 Roma tomatoes, diced
- 1/2 bunch fresh cilantro
Boston Market Meat Loaf

Mix all ingredients together in first list until well blended
- Meat Mixture:
- 1 1/2 pounds lean ground chuck
- 1/2 cup minced onions
- 1/2 tsp garlic salt
- 3/4 cup drained diced tomatoes
- 3/4 cup plain bread crumbs
- 1 egg
- Topping:
- 3/4 cup tomato sauce
- 2 Tbs sugar
Scallops Vermouth

- 1/4 cup butter or margarine
- 1 Tbs minced onion
- 2 Tbs flour
- 1 can (4 oz) sliced mushrooms, drained
- 1/4 cup dry vermouth
- 1/2 tsp salt
- 1/8 tsp pepper
- 1 # bay scallops
- 1 bay leaf
- 2 tsp lemon juice
- 1/2 cup milk or cream
- 1 egg yolk
- 1 Tbs chopped parsley
Rockin' Salsa

This recipe makes several jars of spicy salsa that's great for gifts ot to just have in your pantry
- 1 red onion, chopped
- 1 white onion, chopped
- 1 yellow onion, chopped
- 6 pounds fresh tomatoes, peeled and chopped
- 2 jalapeno peppers, chopped
- 3 peppers, any color, chopped
- 1 8-oz can tomato sauce
- 1/2 cup white or apple cider vinegar
- 5 cloves garlic, chopped
- 1 1/2 Tbs salt
- 1 Tbs crushed red pepper
- 1 tsp cumin
- 2-3 Tbs brown sugar
- 2-3 Tbs white sugar
- 8 pint canning jars with lids and rings
