Fruit and Cookie Pizza

Preheat oven to 350. Spread entire roll of cookie dough out onto a large ungreased pizza pan of cookie sheet
- 1 16.5oz pkg refrigerated cookie dough
- 1 8oz pkg cream cheese, softened
- 1/4 cup sugar
- 1 tsp vanilla
- 1 cup fresh fruit, cut into slices (strawberries, blueberries, kiwi, peaches)
- 1/4 cup fruit preserves, any flavor
- 2 tsp water
Fruit Pizza

Heat oven to 375 Line 12 inch pizza pan with foil; spray with cooking spray
- 1 package (16.5 oz) refrigerated sliceable sugar cookies, sliced
- 1 package (8 oz) cream cheese, softened
- 14 cup sugar
- 1/2 tsp vanilla
- 4 cups assorted cut-up fruit (kiwi, strawberries, blueberries, and drained canned mandarin oranges or peaches)
- 1/4 cup apricot preserves, pressed through sieve to remove lumps
- 1 Tbs water

Heat oven to 375. Separate dough into 16 triangles
- 2 cans (8 oz each) Pillsbury refrigerated crescent dinner rolls
- 1 package Hillshire Farm Lit'l Smokies
Spaghetti Pie

Cook spaghetti (3 1/2 cups)
- 6 oz spaghetti
- 2 Tbs butter
- 1/3 cup grated parmesan cheese
- 2 well-beaten eggs
- 1 pound ground beef
- 1/2 cup chopped onion
- 1/4 cup chopped green pepper
- 1-6 oz can tomatoes (cut up)
- 1-6 oz can tomato paste
- 1 tsp sugar
- 1 tsp oregano
- 1/2 tsp garlic salt
- 1 cup cottage cheese
- 1/2 cup shredded mozzarella cheese
Basic Rib Rub

Combine ingredients and rub on ribs to taste
- 1 Tbs each of coarse salt, ground black pepper and paprika
- 1 tsp brown sugar
- 1 tsp chili powder
- 1/2 tsp garlic powder
Chilli-Chicken Casserole

Line bottom of 13x9x2 inch baking dish with chips; set aside
- 4 oz tortilla chips, slightly crushed
- 1 pound boneless chicken breast, cut in 1-inch pieces or ground beef
- 1 small onion, diced
- 1 clove garlic, minced
- 2 Tbs oil
- 1 can (15 oz) tomato sauce
- 1 can (17 oz) whole-kernel corn, drained and rinsed
- 1 can (15 1/2 oz) red kidney beans, drained and rinsed
- 1/2 cup each sliced ripe and green olives
- 2-3 Tbs chili powder, or to taste
- 1/4 tsp crushed red pepper, or to taste
- 1 tsp black pepper
- 1 Tbs each basil and chopped parsley
- 1 cup each shredded Monterey Jack and Cheddar cheese
Mexican Broccoli Dip

Mix all together and microwave until cheese melts
- 1 package chopped broccoli - thawed and drained well.
- 1/2-1 stick margarine
- 1 # mexican velveeta
Cajun Sausage and Rice

1. Bring 3 cups water to a boil in a large saucepan
- 1 box (8 oz) red beans and rice mix
- 2 bell peppers, cut bite size
- 4 fully cooked spicy beef sausages (from a 14 oz package), sliced
- Sliced scallions
Chocolate-Pistachio Cookies

Make this dough ahead of time and freeze
- 2 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 3/4 tsp kosher salt
- 1/4 tsp baking soda
- 1 1/4 cups (2 1/2 sticks) unsalted butter, room temperature
- 1 1/4 cups (lightly packed) light brown sugar
- 1 tsp vanilla extract
- 1 large egg white
- 5 oz bittersweet or semisweet chocolate, chopped
- 1 cup unsalted, shelled raw pistachios, coarsely chopped
- Flaky sea salt (Maldon)
Easy Grilled Ratatouille

Heat grill or oven to 350
- 1 pint cherry tomatoes, halved
- 1 cup frozen pearl onions
- 4 cloves garlic, minced
- 2 zucchini, seeded and chopped
- 2 yellow peppers, seeded and chopped
- 1 eggplant, seeded and chopped
- 2 Tbs Italian seasoning
- 2 tsp Hungarian Sweet Paprika
- Kosher salt
- Olive oil, for drizzling
- Zest of 1 lemon, plus lemon wedges, for spritzing
- Parmesan cheese
