Grilled Tilapia with Mango Salsa

Don't let the list of ingredients fool you
- 1/3 cup olive oil
- 1 Tbs lemon juice
- 1 Tbs minced fresh parsley
- 1 clove garlic, minced
- 1 tsp dried basil
- 1 tsp black pepper
- 1/2 tsp salt
- 2-6 oz tilapia fillets
- 1 large ripe mango, peeled, pitted and diced or you can use canned peaches drained and diced
- 1/2 red bell pepper, diced
- 2 Tbs minced red onion
- 1 Tbs chopped fresh cilantro
- 1 jalapeno pepper, seeded and minced
- 2 Tbs lime juice
- 1 Tbs lemon juice
- S&P to taste

- 1 jar kalamata olives pitted and rinsed
- red grapes
- 3 Tbs olive oil
- 3 Tbs balsamic vinegar
- 2 1/2 Tbs fresh thyme
Mexican Quinoa

Use quinoa instead of rice to make a flavorful spicy Mexican-style side dish that's light and healthy
- 1 Tbs olive oil
- 1 cup quinoa, rinsed
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1-10oz can diced tomatoes with green chile peppers (Rotel)
- 1 envelope taco seasoning mix (4 Tbs)
- 2 cups chicken broth
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1/4 cup cilantro or parsley

- 8 1/2 oz artichokes packed in water, drained
- 6 oz marinated artichoke and drained
- 4 oz drained diced green chilies
- 6 Tbs mayonnaise
- 1 1/2-2 cups shredded chedda cheese
Pasta E Fagioli Soup in a Crock Pot

This tastes exactly like the pasta e fagioli soup at the Olive Garden
- 2 pounds ground beef
- 1 onion, chopped
- 3 carrots, chopped
- 4 stalks celery, chopped
- 2 28-oz cans diced tomatoes, undrained
- 1 16-oz can red kidney beans, drained
- 1 16-oz can white kidney beans, drained
- 3 10-oz cans beef stock
- 3 tsp oregano
- 2 tsp pepper
- 5 tsp parsley
- 1 tsp Tabasco sauce
- 1 20-oz jar spaghetti sauce
- 8 oz pasta
Calico Stuffed Peppers (Micro-wave)

Wash peppers and cut in half lengthwise
- 3 large green peppers
- 1 lb bulk sausage or ground beef
- 3/4 cup chopped onion
- 1 (8 oz) can whole kernel corn, drained (can substitute cooked rice for corn)
- 3 Tbl catsup
- 1/4 tsp garlic salt
- 1 (8 oz) can tomato sauce
- 1/2 cup grated cheddar cheese
Peanut Butter Delites

Mix first 4 ingredients together and roll into 1 inch balls
- 1 18 oz jar chunky peanut butter
- 3 cups rice krispies
- 1/2 cup butter
- 1 pound confectioners sugar
- 1 large pkg chocolate chips(12 oz)
- 1 bar parafin wax
Guacamole

- 2 fresh avocados
- 1 lime wedge
- 1/2 tsp salt
- 2 Tbs diced tomato
- 1 1/2 Tbs fresh jalapenos, diced fine
- 1 Tbs red onion, diced fine
- 1 tsp chopped cilantro
Deviled Eggs-Best Ever

Remove egg yolks and place them in a small bowl
- 6 hard cooked eggs, peeled and cut lengthwise
- 1/4 cup mayonnaise (not salad dressing)
- 1 tsp yellow mustard
- 2-3 tsp coarse grated horseradish, drained (more or less to taste)
- 2 Tbs real bacon bits
- 1/8 tsp salt
- 1/4 tsp white pepper
- Paprika for garnish
Shrimp Scampi

- 1/2 cup butter
- 1 tsp lemon juice
- 3/4 tsp garlic powder
- 3/4 tsp salt
- 3/4 tsp tarragon
- 1/2 tsp basil
- 1 # shrimp
