Beer Brisket

Trim the fat from the brisket
- Sauce:
- 1-4 pound brisket
- 1 medium onion, peeled and thinly sliced
- Salt and pepper to taste
- 1/4 cup chhili sauce
- 1 clove garlic
- 2 Tbs flour
- 2 Tbs brown sugar
- 1-12 oz bottle beer
Picante Chicken

Place chicken in a greased shallow 2-qt
- 4 bonless, skinless chciken breasts (1#)
- 1 jar (16 oz) picante sauce
- 3 Tbs brown sugar
- 1 Tbs prepared mustard
- Hot cooked rice, optional
Greek Salad

Apricot Kielbasa Slices

These easy to fix sausage bites are coated in a thick zesty sauce with just the right amount of sweetness
- 1 pound fully cooked kielbasa or polish sausge, cut into 1/4" slices
- 1 jar (12 oz) apricot preserves
- 2 Tbs lemon juice
- 2 tsp dijon mustard
- 1/4 tsp ground ginger
Chicken Pesto Pasta

This is a favorite because it is quick and easy, but it looks like I spent all day cooking
- 1 package (16 oz) bow tie pasta
- 1 cup cut fresh asparagus (1-inch pieces)
- 1 1/4 cups sliced fresh mushrooms
- 1 medium sweet red pepper, sliced
- 2 Tbs olive oil
- 1 1/2 tsp minced garlic
- 2 cups cubed cooked chicken
- 1 can (14 oz) water-packed artichoke hearts, rinsed, drained, and quartered
- 2 jars (3 1/2 ounces each) prepared pesto
- 1 jar (7 oz) oil packed sun-dried tomatoes, drained and chopped
- 1 tsp salt
- 1/8 tsp crushed red pepper flakes
- 1 cup (4 oz) shredded Parmesan cheese
- 2/3 cup pine nuts, toasted
Summer Sausage

Judy's home made sausage. Really good and freezes well
- 5 # Hamburger
- 2 1/2 tsp garlic salt
- 2 1/2 tsp coarse ground pepper
- 2 1/2 tsp mustard seed
- 1 tsp hickory liquid smoke
- 1/2 tsp whole black peppercorns
- 1 Tbs crushed red pepper
- 5 rounded tsp mortons quick salt
Baked Penne and Smoked Sausage

Heat oven to 375. Cut sausage into 1/4 inch slices and brown in skillet; drain
- 1-16 oz package smoked sausage
- 1- 103/4 oz can cream of celery soup
- 1 1/2 cups milk
- 4 cups cooked penne pasta; (2 1/2 cups (8 oz) uncooked)
- 1 cup shredded cheddar cheese
- 1 1/2 cups cheddar french fried onions
- 1 cup frozen peas or mixed veggies
- 1-4 oz can mushrooms
Cheese Cookies

Blend softened butter and flour in large bowl
- 2 sticks butter-softened
- 2 cups flour
- 2 cups grated sharp cheddar cheese
- 2 cups rice krispies
- 1 tsp dijon mustard
- cayenne pepper-pinch or to taste
Fajita Chop-Chop Salad

In a large bowl, combine the olive oil, chili powder, cumin, salt and pepper
- For the steak:
- 1 Tbs olive oil
- 1 tsp chili powder
- 1/4 tsp cumin
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2-8 oz skirt steaks
- For the salad:
- 1 large head Romaine lettuce, finely shredded
- 1 medium red pepper, chopped
- 1 cup fresh or frozen corn, cooked and cooled
- 1 cup canned black beans, rinsed and drained
- 3/4 cup shredded monterey Jack cheese
- Tortilla chips or strips
- For the dressing:
- 1/2 cup prepared salsa
- 1/4 cup sour cream
- Salt and pepper to taste
