Zesty Ginger-Tomato Chicken

In medium bowl, combine ingredients to make sauce
- 4 Boneless-Skinless Chicken Breast
- 2 cans Diced Tomatoes, 1 can drained
- 2 Tbsp Quick Cooking Tapioca
- 1 Tbsp Grated Ginger
- 1 Tbsp Cilantro
- 4 Cloves Garlic
- 1 Tbsp Brown Sugar
- 1/2 tsp Salt
- 3 c. Cooked Couscous or Rice

- 2 1/2 cups chicken broth
- 1 can cream of chicken soup
- 3 tablespoons olive oil
- 1 large onion, chopped
- salt and pepper
- 4 small chicken breasts cut into bite size pieces

Strawberry Spritzers

These drinks are strong, so I add a little sprite to the mix
- 1 cup Gin
- 1/2 Basket Fresh Strawberries
- 1/2 cup Simple Syrup (equal parts sugar and water, dissolved)
- Juice of 1 Lemon
- 2-3 cups Crushed Ice
- Fresh Strawberries for Garnish

- 2 Medium Avocados, chopped
- 6 Slices bacon, cooked and crumbled
- 2/3 Cup Chopped Fresh Basil
- 2 Roma Tomatoes, diced
- 2 Tbsp Lemon Juice
- 1 Tbsp Olive Oil
- 3 Cloves Garlic, minced
- 1/4 tsp Ground Black Pepper
- 1/8 tsp Salt
- 1/2 Cup Parmesan Cheese, finely shredded

- 1 Bottle of your favorite white wine (This recipe is just as delicious with a good red wine, if you so choose)
- 1 Lemon cut into wedges
- 1 Orange cut into wedges
- 1 Lime cut into wedges
- 1 Peach cut into wedges
- 1 Cup sliced strawberries
- 1/2 Cup lemonade or limeade
- 1/2 Cup Sugar
- 2 shots of apricot, peach or "berry" flavored brandy
- 2 Cups ginger ale

- 1 Onion, chopped (maybe too much onion)
- 1/2 cup Fresh Basil, chopped
- 1/4 cup Red Wine Vinegar
- 2 Tbsp Olive Oil
- 3 Cloves Garlic, minced
- 1 tsp Sugar
- 1 Box Angel Hair Pasta
- 1/4 cup Grated Parmesan Cheese
Summer Solstice Martini

I added a little more cranberry juice to these drinks because they were a little on the strong side, but tasty!!
- 2 1/2 oz Raspberry Vodka
- 1 oz Cointreau
- 1 oz Rose’s Lime Juice
- 1/2 oz Cranberry Juice
- 1/2 oz Orange Juice
Tequila-Key Lime Meringue Pie

- For crust:
- 1 1/2 cups graham cracker crumbs
- 6 Tbsp. Melted butter
- 1/3 cup sugar
- 1 tsp. ground cinammon
- 1/4 tsp. kosher salt
- For filling:
- 8 large egg yolks
- 2 (14-oz.) cans sweetened condensed milk
- 3/4 cups key lime juice
- 2 Tbsp. Lime zest (I could do without this or mince it finer)
- 1 Tbsp. Tequila
- For topping:
- 3 Tbsp. cold water
- 1 1/2 Tbsp. corn starch
- 2/3 cup boilin gwater
- 4 large egg whites
- 1 1/2 tsp cream of tartar
- 1 cup sugar
- 1 1/2 tsp. vanilla extract
- 1/8 tsp kosher salt
MARSHMALLOWS
