Cranberry-Apricot Pork Roast

Mix cranberry sauce, apricots, orange peel and juice, shallot, vinegar, mustard, salt and ginger in slow cooker
- 1 can Whole berry Cranberry Sauce
- 1/2 cup Dried Apricots, quartered
- 1/2 tsp Grated Orange Peel
- 1/4 cup Fresh Orange Juice
- 1 Large Shallot, chopped
- 2 tsp Cider Vinegar
- 1 tsp Dry Mustard
- 1 tsp Salt
- 1 tsp Fresh Ginger, grated
- 2 lb. Boneless Pork Loin Roast, well trimmed
GLAZE FROSTING

Place powdered sugar, cream cheese, and vanilla in a medium bowl; beat with a mixer at low speed just until blended
- 1/2 cup powdered sugar
- 2 Tbsp (1 ounce) 1/3 less fat cream cheese, softened
- 1/2 tsp vanilla extract
- 2 tsp fat-free milk

- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper
- 1 small jalapeno, seeded and diced
- 1 (19-ounce) can enchilada sauce
- 1 (10-ounce) can cream of chicken soup
- 2 cups milk
- 1 cup shredded Monterey Jack cheese

- 6-8 Tbsp sugar
- 1/2 cup fresh lime juice
- 1 cup white rum
- 6 cups club soda (I use sprite)
- 6 cups crushed ice
GERMAN CHOCOLATE CAKE

Take one package of Baker's sweetened chocolate and mix it with 1/2 cup of boiling water
- 1 (4-oz) package of Baker's Sweetened Chocolate
- 1/2 cup boiling water
- 1 cup butter or margarine
- 2 cups sugar
- 4 egg yolks
- 4 eggs whites
- 1 teaspoon Vanilla
- 2 1/2 cups sifted cake flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
Slow-Cooker Pizza

I use ground turkey and fresh mushrooms
- 1 1/2 lbs ground beef or Italian sausage
- 1 medium onion, chopped
- 1 green pepper, chopped
- half a box rigatoni, cooked
- 7 oz. jar sliced mushrooms, drained
- 3 oz sliced pepperoni
- 16 oz jar pizza sauce
- 10 oz mozzarella cheese, shredded
- 10 oz cheddar cheese, shredded
Taco Soup

In a medium skillet, cook the ground beef until browned over medium heat
- 1 lb. Ground Beef
- 1 Onion, chopped
- 1 can (16 oz) Black Beans, with liquid
- 2 cans Corn, with liquid
- 1 can (8oz) Tomato Sauce
- 2 c. Water
- 2 cans Tomatoes peeled and diced
- 1 can (4 oz) Diced Green Chile Peppers
- 1 pkg. Taco Seasoning Mix

For each fizz, add ¾ tsp sugar, 3 sprigs mint, and ¾ oz fresh lime juice to cocktail shaker
- 3 tsp Sugar
- 12 Sprigs Fresh Mint, plus extra for garnish
- 3 oz Fresh Lime Juice
- 8 oz Vodka
- Cranberry Juice
- Champagne or Sparkling Wine
- Fresh Raspberries for Garnish
Tex-Mex Pulled Pork

Mix sauce ingredients in slow-cooker
- Sauce:
- 1 can (8 oz) Tomato Sauce
- 1 cup Bottled BBQ Sauce
- 1 Medium Onion, thinly sliced
- 2 cans (4.5 oz each) Diced Green Chilies
- 1/4 cup Chili Powder
- 1 tsp Cumin
- 1 tsp Oregano
- 1/4 tsp Ground Cinnamon
- One 2 1/2 - lb. well-trimmed Boneless Pork Loin Roast
- 1/2 cup Cilantro, chopped
Turkey Sausage and Tortellini Soup

I used one can of stewed tomatoes and one can of petite-diced tomatoes
- 6 oz Cooked smoked turkey sausage, halved lengthwise and cut into 1/2-inch slices
- 2 c. packaged shredded cabbage with carrot (coleslaw mix)
- 1 cup loose-pack frozen green beans
- 2- 14 1/2 oz Cans Italian-style stewed tomatoes
- 1- 10 1/2 oz Can condensed French onion soup
- 3 c. water
- 1- 9 oz Package refrigerated cheese-filled tortellini
- Grated Parmesan Cheese
